Jeff's Famous Jerky - Sriracha Style Ghost Pepper

Sriracha Style Ghost Pepper is the newest beef jerky creation from the folks at Jeff's Famous Jerky. Read our previous reviews of Jeff's Famous Jerky.

Jeff's Famous Jerky officially opened for business in 2010 and is owned and operated by Jeff's Famous Foods, Inc., led by founder Jeff Richards and CFO Mike Aggarwal, out of Mission Viejo, CA. The company offers a dozen flavors of jerky and four flavors of bacon jerky, along with one chicken jerky variety.

This Sriracha Style Ghost Pepper is described on the packaging as "Extra Hot & Spicy" and is the second jerky from Jeff's Famous to include the popular asian-style hot sauce.

Review

The first taste to hit my palate is a light sweetness and saucy flavor. The heat picks up quickly. The chewing brings in some more sweet, but also more of the sriracha and chili sauce. There's a noticeable vinegar that adds a light tanginess. I can also detect the soy sauce, but it tends to mimic teriyaki with all the sugar and vinegar. The ghost pepper is lightly identifiable. There's hints of cumin noticeable. The onion is lightly noticeable too.

As for being marketed as "Sriracha Style Ghost Pepper", it seems to hold up somewhat. The sriracha sauce is more noticeable than the ghost pepper. I can detect light levels ghost pepper flavor, though stronger levels of its heat.

As for the heat, this seems to rank on my personal heat scale as "medium hot" (level 4 out of 5). It's not the seething hot that you expect from ghost pepper-flavored jerky, but hot enough that most folks wouldn't want to try this.

Otherwise, the primary taste profile of this Sriracha Style Ghost Pepper jerky is a dominant sweetness and teriyaki flavor, but doctored with the chile/garlic combination of sriracha sauce and ghost pepper. THere's a nice tangy component in the chewing from the vinegar. Lastly, there's hints of onion and cumin.

Overall, this jerky has all the flavors categories: sweet, savory, spicy, tangy, salty. It comes off as slightly fruity from the chili sauce, ghost pepper and vinegar. The natural meat flavors are barely noticeable, but the marinade and seasonings are so good that I didn't miss it.

The meat consistency seems excellent. I don't notice any streaks or spots of fat, and only light levels of stringiness. Otherwise, nothing unchewable. It has a tender, meaty chew, somewhat steak-like, but having some thick-pasty feel, perhaps due to the heavier load of ingredients.

Verdict: This Sriracha Style Ghost Pepper Beef Jerky from Jeff's Famous Jerky is packed with lots of flavor for all the areas of the tongue. It's more of a jerky you take smaller bites of to enjoy the wide range of flavors. It's certainly a jerky for fans of sweet & hot, and in some respects is almost like a spicy teriyaki, but with an emphasis on the tangy, fruity character of Sriracha and Ghost Pepper.
