The brand got started in 2013.

Co-founded by Wian van Blommestein, Ayoba-Yo is a family run business that focuses on South African-style meat snacks. Made in a USDA-inspected facility, the company's biltong and droëwors is made from top round and spiced with an old family recipe. It's free of artificial ingredients and preservatives.

Droëwors is a style of sausage originating from South Africa, using ingredients similar to biltong, and is more dry than American-style meat sticks.

Ingredients

Beef, vinegar, salt, water, coriander, pepper, cloves, sheep casing

Review

The first flavors that hit my palate is a blend of tangy vinegar and coriander. The chewing brings on a bit more of the tangy, along with a light salt and a touch of aged beef flavor.

Tasting similar to the company's biltong, this droëwors seems to also rely on the vinegar and coriander to generate much of unique flavor. There's a noticeable fatty oiliness that coats the tongue and creates a light buttery character.

The meat consistency is perhaps a little more fatty than other brands of droëwors I've experienced, but if you like having some fat mixed into your meat, the way I do, it's actually enjoyable. Ayoba-Yo's droëwors feels a little more chewy than other brands, but comparably as light and dry. The casing has a light crisp when biting.

Verdict

This Droëwors from Ayoba-Yo creates an overall light but beefy flavor of the famous South African-style meat stick. It has a significant fatty character but yet it creates a buttery quality that makes it quite decadent. I like the vinegar tanginess, the lower sodium content, and I like the light crisp bite. If you've never had droëwors before, Ayoba-Yo's offering makes a great introduction to the world of South African-style meat snacking, and may just very well convert you from the American-style grease sticks.
The company also owns The Jerky Hut brand of jerky, along with Bakke Brothers Brand.

According to the company, the Whiskey Hill Smokehouse brand focuses on exotic meats and more exotic recipes than The Jerky Hut and the Bakke Brothers lines. It also focuses on all natural ingredients and its jerky varieties are all marked as "Gluten Free".

This "Whiskey BBQ" is part of a series of alcohol-infused jerky varieties recently launched by Whiskey Hill Smokehouse. Others include Maple Bourbon, and Saki-Teriyaki. The package is marked, "Gluten Free".

Ingredients

Beef, brown sugar, water, tomato paste, whiskey, gluten free soy sauce, salt, molasses powder, honey, natural smoke flavoring, spices, garlic, onion

Review

The first flavor I pick up is the whiskey, mostly through its fermented character, but also with a light malt and burn. There's also a notable spiciness, comparable to cayenne. The tomatoey BBQ sauce comes in. The chewing brings on more of a classic BBQ sauce, with a fair amount of sweet, along with a light smoke flavor.

For being marketed as "Whiskey BBQ" this really hits the marks dead on. I get an easily identifiable whiskey malt, fermented flavor, and a light alcohol burn going down. It's probably the first flavor that comes in. The BBQ part is well represented through a classic, tomatoey profile and a lot of sweet. It also has a bold seasoning with good douses of garlic, onion, black pepper, and a bit of cayenne.

Otherwise, the primary taste profile is a thick sweet, tomatoey BBQ sauce, well seasoned, with an easily-identifiable whiskey flavor. You get a light smokiness along with a beefy, steak-like flavor that comes in towards the end. It's moderately spicy, registering a "medium" on our heat scale (level 3 out of 5)

The meat consistency is excellent. These are thick strips of pure meat with no signs of fat and no stringiness detected. The initial bites are chewy, yet are still easy enough to get through, but chew down to a steak-like, meaty texture. There's a faint bit of stickiness that remains on the fingers.

Verdict

This Whiskey BBQ beef jerky from Whiskey Hill Smokehouse is a great representation of the company's namesake, delivering a lot of whiskey malt and ferment in the initial taste and evening a little bit of a burn as it goes down. The BBQ sauce in this is equally decadent through its thick sweet, tomatoey profile and bold blend seasonings. There's even a smoke flavor that comes through and a beefy natural meat flavor towards the end. Even these thick slices of pure meat create a lot of chewing enjoyment though remain easy enough get through. While you're not going to get tipsy from these slices of alcohol-infused beef, there's still plenty of whiskey flavor buried in this BBQ glaze that you can't help seeing banjos and Smoky Mountains with each bite.
It was started by Roy Park in early 2015 who found an old family recipe that dated back to the late 1980s.

Since then, Roy has been selling his jerky in local markets and retailers in California. Recently they started a website and are now taking online orders.

This Supernova Hot variety is one of three hot beef jerky flavors the company offers.

Ingredients

Beef, soy sauce, cayenne pepper, crushed red chilies, corn syrup solids, honey, worcestershire sauce, vinegar, black pepper, lemon juice, liquid smoke, granulated garlic, habanero, white pepper, onion powder, sodium nitrite.

Review

The first flavors that hit my palate is a light chile pepper flavor and salt. Touches of black pepper and cayenne become noticeable soon after. The chewing brings on much of the same flavors, while the heat builds up. There's a faint natural meat flavor towards the end.

For being named, "Supernova Hot", it seems to hold up. It definitely does get hot over several chews. I'd rate this as "hot" my personal heat scale, (level 5 out of 5). I'm sure much of the heat comes from the habanero ingredient, but I don't taste any of the unique habanero flavor. It's mostly a lot of heat.

Otherwise, the primary taste profile is lots of heat with a flavor reminiscent of chili powder and red chile flavor. There's some black pepper noticeable, a little bit of salt, and faint bits of natural meat flavor.

The meat consistency feels dry and moderately chewy. It takes on a meaty feel, but doesn't really chew down like a real piece of steak. It tends to remain dry. There's a light amount of stringiness.

Verdict

This Supernova Hot from Astro Fresh Jerky definitely delivers a lot of heat, as its name suggests, along with a fair amount of chile pepper flavor, mostly as cayenne and red pepper flakes. Aside from that, I found the overall flavor unremarkable compared to competing brands of heavily red peppered jerky. It's a good jerky for heat seekers, who just want the rush that comes with hot chiles, but not necessarily creative in flavor.
The brand has been around since 1999.

Manufactured in their very own USDA inspected facility, Beefy Boys is made from top round sourced from a supplier located 120 miles from their plant, then marinated and cooked using an old family recipe.

This Reserve variety is cut into long strips, as opposed to the slabs used in the company's other varieties. It's described as being more tender, and those who've tried it say it reminds them of, "the old Swiss-Italian style".

Ingredients

Beef, red wine, water, soy sauce, red wine vinegar, black pepper, seasoned salt, spices, other flavorings.

Review

The first flavors that I pick up is the red wine marinade, followed by a light saltiness, and hints of soy sauce. The chewing brings on more of the marinade while the soy sauce increases in definition. There are hints of seasonings that come in later, along with the natural meat flavors.

As for the company's claims of being more tender, it certainly is. It's lightly moist to the touch, and there's a sense of moisture when biting off a piece, but overall it's still dry. As for tasting like the "old Swiss-Italian style", that's hard for me to say. I'm not quite sure what kind of jerky that is.

Otherwise, the primary taste profile is that of a steak, marinated in red wine, and cooked well-done. It still has a savory character from the soy sauce, with hints of seasonings and black pepper. The level of saltiness feels low to moderate.

The meat consitency looks excellent. Seemingly all meat, sliced into thick strips, but relatively tender and lightly moist. It chews just like chunks of real steak, very meaty. Because it's sliced with the grain, some pieces require some effort to bite off.

Verdict

This Reserve Beef Jerky from Beefy Boys delivers an unmistakable flavor of a steak marinated in red wine. Bolstered with soy sauce and seasonings, it's still savory like beef jerky, but more reminiscent of a fine steak. The meat consistency and chewing texture, however, is the star of the show. It feels and chews like a real piece of steak, bringing out the inner-carnivore in us. You could eat a bag of this jerky and almost feel like you've had dinner.
Gerstman, who transplated to San Diego from the East Coast 8 years ago, met Andria who also happened to love beef jerky. The two joined forces and launched Jerky's Gourmet.

Their jerky is sold at various shops, bars, and venues across the San Diego area. However the two can be found at the Little Italy Farmers Market on Saturdays, doling out samples of their jerky.

Habanero Sculpin also happens to be the name of a craft beer made by Ballast Point Brewing, another San Diego business. This jerky is marinated for 24 hours in this brew, creating a one-two punch of habanero spices and "subtle hoppy notes" on the tongue.

Ingredients

Grass fed beef, Habanero Sculpin Beer, brown sugar, balsamic vinegar, seasoned salt, lime juice, gluten-free soy sauce, habanero powder, garlic, pepper, liquid smoke.

Review

The first thing I taste on the tongue is a heavy sweetness, along with some black pepper, and the "subtle hoppy notes" that the company described. Meanwhile, the heat is building quickly. The chewing brings on some of the natural meat flavors, a light habanero chile flavor, some more sweetness, and touches of garlic and seasonings.

For being marketed as "Habanero Sculpin", and for a jerky marinated in Ballast Point's Habanero Sculpin IPA, it represents pretty well. I do get a good deal of habanero heat, and light habanero chile flavor. But I also get a lot of the Habanero Sculpin IPA flavor. I can pick up the hops, and even the malt flavor. In fact, I can pick up a subtle alcohol too.

Otherwise, the flavors that define and dominate this jerky starts with a heavy sweetness that brings on the hop bitters, and black pepper spiciness, right away. The malt flavor comes on right along. The light habanero chile flavors comes through in the chewing, along with a light natural meat flavor. The jerky finishes with some garlic and seasonings. There's also noticeable tanginess in the chewing that creates an eye-opening experience.

The level of heat in this feels sigifnicant, but not over the top. On my personal heat scale, I'd rate this as "medium hot" (level 4 out of 5). If you love spicy hot foods, this will give you enough burn to enjoy without making you stop to cool off.

The meat consistency seems pretty good. This is a brisket cut, sliced thin to medium, and has a typical jerky chewiness, though still moist. I don't see any fat on these strips, though light stringiness, which seems expected for a brisket cut.

Verdict: This Habanero Sculpin from Jerky's Gourmet is one of the better beer-marinated jerky varieties I've reviewed. It really brings out the hops from an otherwise very hoppy IPA, along with some malt flavors, and even a light alcohol flavor. Most beer-marinated jerky brands settle with cheap beer, but apparently not Jerky's Gourmet. Ballast Point's "Habanero Sculpin IPA" is one of the top-shelf brews among San Diego craft beer aficionados, and Jerky's Gourmet has done an excellent job with it's marinated-beef interpretation.

Ayoba-Yo describes this Spicy Biltong as being gluten-free, and, "...a tender piece of beef with a naturally explosive flavor."

Ingredients

Beef, salt, coriander, cayenne pepper, worcestershire powder, chili powder, pepper, brown sugar, vinegar

Review

The first flavors that hit my palate is a blend of vinegar and coriander, with a light bit of cayenne in the background. The chewing brings on some natural meat flavors, along with tanginess, and a bit more cayenne and salt. There's a light bit of heat building.

For being marketed as "Spicy Biltong", it definitely delivers on its expectations. I get the classic flavor of South-African-style biltong, mostly as the aged, marbleized meat flavor bolstered with coriander, salt, and vinegar. But I also get a decent level of spiciness from the cayenne pepper. On my personal heat scale, I'd rank the heat as "mild medium" (level 2 out of 5).

Otherwise, the primary taste profile is that of an aged, marbelized meat flavor, livened up with vinegar, coriander, and salt, then touched up with a light flavor and heat of cayenne.

The meat consistency is excellent. Marbelized beef is sliced thin into bite-sized pieces. It feels dry, though soft. Chewing is easy, very meaty, and once chewed down soft, feels like italian deli meat such as capicola or prosciutto.

Verdict

This Spicy Biltong from Ayoba-Yo offers up a flavor that is unmistakably South African, noted by the coriander, salt, and vinegar seasonings, yet spiced up with a light dousing of cayenne. Overall, it's not hot, but adds a light bit of heat to a biltong that's already tangy and lively. The cayenne tends to compete with the biltong flavor, so if you want more of that South African taste, buy the Traditional instead. Get the Spicy if you want a blend of both. Otherwise, I really love the aged, marbleized meat flavor that comes out of this biltong, along with its tender, easy chewing.
Bakke Brothers Brand is owned by Whiskey Hill Smokehouse, LLC based out of Hubbard, OR. Whiskey Hill also owns The Jerky Hut, as well as its own house brand, Whiskey Hill Smokehouse.

Bakke Brothers differs from The Jerky Hut in that it's free of preservatives such as sodium nitrite, sodium erythorbate, et al, and it's also gluten-free.

This "Garlic Lovers" appears to be one of the brand's best sellers based on reviews.

Ingredients

Beef, brown sugar, water, garlic, salt, celery powder, black pepper, onion

Review

The first flavors that come into view is a well defined garlic, along with a fair amount of sweet. There's a light salt as well. The chewing brings on a little bit of the natural meat flavors, while the garlic continues to blossom. Towards the latter part of chewing, the black pepper becomes recognizable.

For being marketed as, "Garlic Lovers" there's an unmistakable garlic presence in each bite. There's even a garlic aroma that wafts from the package as soon as its torn open. The flavor is strong enough that it overpowers the other ingredients, yet stays away from burning the tongue. It's about as garlicky as jerky can get without scorching the palate.

Otherwise, the primary taste profile is that of a sticky sweet garlic with a light salt and pepper. It's overall mild and suitable for all spice tolerances.

The meat consistency is excellent. These are thick sliced strips of beef. They start out quite chewy, almost tough, but eventually chew down without putting too much wear and tear on the jaws. Once chewed down soft, they take on a steak-like texture. There's little to no stringiness, and barely any fat noticeable. These are pretty much all meat.

Verdict

This Garlic Lovers beef jerky from Bakke Brothers Brand doles out a lot of garlic flavor for those who truly crave the famed pungent seasoning staple. A package of this jerky will give you enough garlic breath to make an Italian nonna fall in love while keeping vampires a good 100 feet away. But while the garlic in this great, it's still a one-dimensional jerky, without much other flavors aside from a strong sweet. The natural meat flavors are light, while the salt and pepper seasonings are also light. The more discriminating jerky aficionado will lose interest after a couple strips. But if garlic's your game, this jerky's got your name.
Based out of Belleville, WI, it's the creation of Scott Hare, presumably the same person who launched Wild Hare Jerky about 10 years ago.

Hare was having dinner with some friends from Mexico when they advised him to make cecina. He traveled to Guadalajara, Mexico to learn more about it, and eventually perfected a recipe for his new brand El Norteño.

El Norteño is currently in stores throughou Southern California, the Southwest, and Midwest. It's real wood smoked, with no MSG. Each package comes with a packet of hot sauce. The company also makes a habanero flavored meat stick.

Ingredients

Beef, water, soy sauce, salt, pepper, spices, dextrose, garlic, onion, sugar, garlic powder, sodium nitrate, spice extractive, silicon dioxide.

Review

The first flavors that hit my tongue are seasonings of salt, garlic, onion, black pepper, and perhaps oregano. The chewing brings on more of the oregano, but also a spiciness comparable to cayenne. I can pick up a light natural meat flavor in the background.

For being marketed as "cecina" as opposed to "jerky" it definitely tastes different than classic, American jerky. It's mostly the oregano spice that I notice different, but also the blend of salt, garlic, onion, and black pepper feels different too. I also want to say there's a faint bit of citrus in there, perhaps lime.

Adding a bit of the included Tapatio sauce adds a vinegar and chile pepper component that really spices this up.

The meat consistency is lightly marbleized. It's very dry and quite chewy. Biting off chunks is easy, however, when pulled with the grain. It has a meaty chewing texture, but being so dry, it doesn't feel like steak.

Verdict

This cecina from El Norteño offers jerky snackers an entirely new experience for its unique blend of seasonings and spices. It doesn't taste "American" at all, but something that could have definitely originated from deep inside of Mexico. Each chew leaches out a savory seasoning, which I think is where this cecina builds its attraction. It's not the tender, soft chewing that Americans seem to want with jerky, but then again, this isn't marketed as jerky. Overall, I think it does a great job of presenting a jerky looking feel, but with a flavor unlike any other jerky.
One the newest jerky brands on the market is Chef Craig's Beef Jerky. A product of CJM Products, it's based out of West Kingston, RI.

It's the idea of Craig Mitchell, who a few years ago, had sent me samples of his own homemade jerky, with the intent of launching a business someday. Mitchell received his Culinary Arts degree from Johnson & Wales University, and has been cooking professionally since 1978.

As of this review, the only flavor Chef Craig's offers is this Original.

Ingredients

Beef, brown sugar, soy sauce, hot sauce, liquid smoke, browning sauce, worcestershire sauce, black pepper, steak seasoning, red pepper, lemon pepper, garlic, onion, chili powder, chipotle chile pepper.

Taste

The first thing I taste from the surface of these pieces is a saucy sweetness with some smokiness mixed in. It's almost like a sweet & smoky combination of worcestershire, soy sauce, and au jus (think French Dip). A light burn begins building.

The chewing flavor brings in a natural meat flavor, but with some citrus-like tanginess. The burn continues to build up.

For being the company's Original flavor, it's anything but plain. In fact, it's very flavorful, with a well-seasoned marinade that tastes much different than many other brands. The tanginess in the chewing livens up the snacking, while the natural meat flavor satisfies the carnivore in me.

It also has a moderate level of heat in this, something I'd rate on my personal heat scale as "medium" (level 3 out of 5). But I don't really taste much of the chile pepper flavor, perhaps just a faint bit reaching through the heavier saucey-seasoned marinade.

The flavor of this jerky seems to build up higher as the chewing goes on. When I put a piece into my mouth, the flavor starts out low and gradually increases with each chew. You could suck on a piece without chewing, and almost get the same effect. There's enough flavor in these meat slices that you can get a lot of it without chewing.

The level of saltiness in this feels moderate, maybe a touch above.

Overall, what you're going to get is a well-seasoned marinade with a very saucy flavor, much like a trio of worcestershire, soy sauce, and french dip au jus, along with a noticeable natural meat flavor, a nice tanginess in the chewing, and moderate amount of heat.

Meat Consistency

These are slices of whole meat, sliced into bite-sized pieces of medium thickness. There's a fair amount of smaller sized bits too.

This is a dry jerky with a slightly sticky surface feel. These pieces have a good deal of flexibility, and seem slightly rubbery.

The chewing texture starts out with that slight rubbery feel, and offers a light bit of chewing resistance. A few chews into it and it starts to soften. It begins to take on a very meaty resemblance, and by the time its chewed down to a soft mass, it feels very much like a piece of steak cooked medium-well.

I don't see much fat on these pieces and found no gristle or tendon. I don't encounter any stringiness, but felt a few pieces of unchewable tissues. It's mostly all meaty.

In terms of clean eating, it's mostly clean. My fingertips do collect a light bit of stickiness, but not enough to require a licking or wiping before touching my keyboard.
Rating

This Original beef jerky from Chef's Craig's tastes far from ordinary, packing in a lot of good flavors. It has a very tasty marinade, more like a combination of worcestershire, soy sauce, and french dip au jus, but with a good deal of sweet and smokiness mixed in.

But then it adds a nice natural meat flavor with a citrus tanginess. Throw in a touch of chile pepper flavor and a moderate level of heat, and it creates a very impressive flavor profile, and not overly salty

The meat consistency is overall good. It starts out with a light rubbery feel, but manages to chew down to a steak-like texture. It's very meaty with little to no stringiness or unchewable tissues. Collecting together the tiny bits of meat can provide something of a hindrance, but overall not that bad.

For me, it was the impressive flavor that opened my eyes and made me think, "Wow, this is great!"

My recommended beer pairing for this, go with a porter, such as the Sierra Nevada Porter, or the Stone Smoked Porter.
Based out of Chicago, IL, the brand spent nearly two years perfecting its recipe for a health-conscious market. The company claims to have "cut the salt in half" and replaced them with herbs and spices.

Think Jerky is a collaboration with three celebrity chefs, Chef Laurent Gras, a three-star Michelin Chef, Chef Matt Troost, a Baconfest champion, and Chef Gale Gand, a TV-host on Food Network. Together, their goal with Think Jerky is to create a great tasting jerky, with grass-fed beef, free-range turkey, that's paleo friendly, gluten free, family-farmed, with no artificial preservatives, and all natural ingredients

This "Thanksgiving" is described by Chef Gras as, "...this unique flavor combination of turkey, cranberry and herbs will remind you of the classic holiday meal."

Ingredients

Free range turkey, cranberry juice, dried cranberries, cane sugar, cabernet vinegar, sea salt, black pepper, onion powder, smoked paprika, thyme, sage, garlic, powder, marjoram.

Review

The first thing I pick up on my palate is a light sweet, followd by spices of thyme, sage, and marjoram. There's a light tanginess too. The chewing brings on a fruity sweetness, with some natural turkey meat flavors.

For being marketed as a turkey jerky that tastes like Thanksgiving, it definitely holds up. This has a turkey meat flavor that tastes just like roasted turkey that's been basted in its own juices. I can pick up a fruity, lightly tart flavor that mimics the cranberry sauce touching the slices of turkey breast. The seasonings of thyme, marjoram, sage, create the stuffing mix flavor.

Overall, the primary taste profile is that of natural turkey meat flavor infused with the holiday touches of cranberry and stuffing, exactly as the company claimed.

The meat consistency is overall good. Very meaty, with no signs of fat. However, I did find one piece with bits of bone and cartilage. But then again, maybe that's like a real Thanksgiving dinner. Otherwise, this meat is soft and tender, and chews like real turkey meat, comparable to juicy breast meat.
Verdict

This Thanksgiving turkey jerky from Think Jerky does an excellent job of mimicking the classic American flavors found on the fourth Thursday of November. The turkey meat has a lot of natural meat flavor, but infused with a tangy, fruity cranberry, and a blend of stuffing seasonings. Each bite is like a trio of turkey, stuffing, and a dabble of cranberry sauce. Even the chewing texture is much like real turkey breast meat, more juicy than dry. Compared to the company's other turkey jerky, "Sriracha Honey", this actually chews and feels like turkey, and even gives off the flavor of roasted turkey.
It's run by Glenn Loehr who started it in 2015.

The company also owns, "Oregon Wine Country Jerky". Together, the two brands infuse the flavors of craft beer and wine from the Pacific Northwest, and target the tourist and gift basket markets.

This, "Dark Ale" variety is described by the company as combining the, "hearty dark ale with mouth-watering premium beef", and says that jerky snackers will love the "high quality nutty flavor".

Ingredients

Beef, beer, brown sugar, soy sauce, salt, garlic, onion, black pepper, celery powder.

Review

The first flavors that hit my palate is a garlic and onion seasoning, followed by a noticeable sweet. The chewing brings on a light touch of soy sauce, along with hints of black pepper.

For being marketed as, "Dark Ale", it actually does have that beer-marinated flavor, mostly noted by the presence of malt. As far as "nutty" is concerned, yes, it has some of that flavor, but overall it's more of that grain flavor you get when you let beef soak in dark ale overnight.

Otherwise, the primary taste profile is that of a light garlic and onion seasoning, with a noticeable sweet. The soy sauce adds a bit of salt, while the malt flavor fills in the background.

The meat consistency looks great. These are thick strips of whole muscle, appearing lean with no visible signs of fat. Chewing is chewy, and slightly tough at first, but breaks apart easily. It takes on a meaty feel, with a little bit of a steak-like texture. Handling is sticky.

Verdict

This Dark Ale Beef Jerky from Northwest Bierhaus serves up a malty representation of dark ale-marinated beef. You're not going to taste the overwhelming flavor of a Rogue Hazelnut Brown Ale, or a Deschutes Porter, but you will taste the overtones of malted barley in the background. Otherwise, it's a lightly seasoned jerky most notable for its thick, meaty strips, which can be tough at first bite. That toughness will eventually wear on you, and you'll find there's not enough flavor-reward to keep you going. Otherwise, it's a great gift item and tourist souvenir.
According to the company, the Whiskey Hill Smokehouse brand focuses on exotic meats and more exotic recipes than The Jerky Hut and the Bakke Brothers lines. It also focuses on all natural ingredients and its jerky varieties are all marked as "Gluten Free".

Whiskey Hill Smokehouse doesn't make any marketing claims on this Gator Jerky aside from being low fat, high protein, and that it "tastes like chicken".

Ingredients

Alligator, water, brown sugar, sugar, gluten free soy sauce, garlic, spice, natural smoke flavoring, celery powder

Review

The first flavor I pick is sweetness, followed by a light salt, and a light fishy flavor. The chewing brings on the natural meat flavors, while the black pepper starts building. There's a faint garlic in the background.

For being an alligator jerky, you get a lot of the natural alligator meat flavors in this. The flavor is not as fishy as other brands of alligator jerky I've reviewed, but it still retains some fishiness which is just a fact of gator jerky. On the other hand, there's a more significant fishy aftertaste that lingers for 15 to 30 minutes. Aside from the sweetness and black pepper, there's not a lot of other seasonings that get in the way. I doesn't at all taste like chicken as the company claims on its website.

Otherwise, the primary taste profile is the natural alligator meat flavor laden with lots of sweet, a fair amount of black pepper, light salt, and traces of garlic. It's fairly mild, despite the black pepper seasoning.

The meat consistency is great. These appear to be strips of pure meat. I've had a lot of other gator jerky brands that include quite a bit of fat and chewy tissues, and this has none of it. The chewing starts out rubbery, which is fairly common for alligator jerky, but it does chew down into something more meat-like. Overall, it's chewy, yet still quite easy to get through. Handling these pieces will result in a fishy smell on your fingers.

Verdict

This Gator Jerky from Whiskey Hill Smokehouse does a great job of giving strips of pure alligator meat instead of being laden with chunks of fat and tissues that many other gator brands tend to do. You get a lot of alligator meat flavor in these strips, with a minimal level of fishiness. Despite the stronger sweet and fair amount of black pepper seasoning, this jerky is minimally flavored to let the natural goodness of gator to come through. While many other alligator jerky brands use a 50/50 blend of chopped alligator and chopped beef, Whiskey Hill Smokehouse is giving you 100% whole muscle gator meat, which other brands can easily let become too fishy. But this brand manages to keep the fishiness down, and the natural flavors up. So kudos to them. I'm still staying away from a 5-star rating on this because as good of a job that Whiskey Hill Smokehouse has done with this, you have to be an absolute alligator meat lover to be thrilled by gator jerky. It's one of those meats better suited for gumbos and jambalayas.

This Buffalo Chicken Wing is a chicken jerky.

Ingredients

Chicken, water, sugar, hot sauce, sodium nitrite.

Review

The first flavors that hit my palate is a strong sweet followed by a buffalo wing sauce. The chewing brings on more of the same flavors.

For being marketed as "Buffalo Chicken Wing", it certainly tastes like buffalo wing sauce, except more sweet, and without the heat. It's quite mild on spice, but keeps that unique buffalo wing sauce flavor.

And that's the primary taste profile, a heavily sweetened, buffalo wing sauce, without the heat and spice. The chicken itself doesn't offer much flavor aside from a "chickeny" flavor in the background.

The meat consistency appears to be all meat and little to no fat or gristle. It starts out a little stiff and chewy, but softens up over several chews. It eventually takes on a chicken-like texture, mosty dry. Some pieces chew mushy, however.

Verdict

This Buffalo Chicken Wing chicken jerky from Astro Fresh does offer that unique buffalo wing sauce flavor, but heavily sweetened, and without the heat and spice. Aside from that, there's little else to report. I wasn't impressed with the heavily sweetened wing sauce, I'd rather have it with a touch of sweet, and perhaps boosted with citrus, like lemon or orange. The chicken meat itself felt mushy at times, and the "chickeny" taste in the back of my mouth doesn't evoke a fresh feeling. Overall, I didn't get much snackability from this.
Jerky's Gourmet is a new brand of jerky, founded by Tim Gerstman and Andria Taylor, based out of San Diego, CA.

This Ghost Pepper jerky is described as being "soy free" and "gluten free", and is balanced "with subtle hints of honey and pineapple".

Ingredients

Grass fed beef, brown sugar, honey, dark molasses, apple cider vinegar, sea salt, lemon juice, worcestershire sauce, granulated garlic, beef stock, pineapple, ginger, ground black pepper, ghost pepper, hickory liquid smoke, cayenne pepper, citric acid, white pepper, paprika.

Review

The first thing I taste on the tongue is a strong sweetness. The ghost pepper heat builds up quickly. I can taste some of its flavor as well. The chewing brings on more of the ghost pepper flavor, along with some worcestershire, and seasonings. I can also taste hints of the pineapple.

For being marketed as a Ghost Pepper beef jerky, it certainly holds up well. I do get quite a bit of its sharp, seething heat, but also a lot of its fruity, flavor. The heat is quite hot, rating as "hot" on my personal heat scale (level 5 out of 5). It brings on a runny nose and sweaty forehead.

The flavors that define and dominate this jerky starts with the strong sweetness, along with a fruity pineapple in the background. But then it's the unique flavor of Ghost Peppers that take over. The saucy combination of worcestershire, seasonings, and even beef stock, become noticeable.

Considering this also marketed as "soy free" and "gluten free", the use of worcestershire, beef stock, and other seasonings as an alternative to soy sauce works pretty well. I can taste its influence, and creates a backdrop that lets the Ghost Pepper flavor stand out well.

The meat consistency seems pretty good. This is a brisket cut, sliced thin to medium, and has a typical jerky chewiness, though still moist. I don't see any fat on these strips, though light stringiness, which seems expected for a brisket cut.

Verdict: This Ghost Pepper variety from Jerky's Gourmet does a great job of giving you the full experience of a Ghost Pepper infused jerky with its sharp, tongue-piercing heat, and its fruity, peppery flavor. But it doesn't stop there, the saucy marinade of worcestershire, beef stock, and seasonings makes for a great alternative to the soy sauce used by so many other brands. The strong sweetness and the light pineapple background creates for a nice contrast to the fiery heat and pungent Ghost Pepper flavor. It's a well balanced jerky that gives you a lot to think about in each bite.
It was started by Roy Park in early 2015 who found an old family recipe that dated back to the late 1980s.

Since then, Roy has been selling his jerky in local markets and retailers in California. Recently they started a website and are now taking online orders.

This Buffalo Chicken Wing is a chicken jerky, comparable to the one we reviewed last week, but labeled, "Hot".

Ingredients

Chicken, water, sugar, hot sauce, sodium nitrite.

Review

The first flavors that hit my palate is a sweetness along with a buffalo wing sauce flavor. There's also a light red chile pepper flavor, and a light bit of heat. The chewing brings on more of the sweet buffalo wing sauce.

For being labeled, "Buffalo Chicken Wing" and "Hot", it seems to hold up. It has the same flavor as the milder version that I reviewed last week, except with some red chile pepper flakes added. Basically, it's a heavily sweetened buffalo wing sauce, but without the spice and heat removed. Meanwhile, the red chile pepper flakes add the spice and heat back in. I wouldn't really call this, "hot", however. It ranks on my personal heat scale as "medium" (level 3 out of 5).

The primary taste profile is exactly that, just a heavily sweet buffalo wing sauce, spiced with red chile pepper flakes.

The meat consistency appears to be all meat and little to no fat or gristle. It starts out a little stiff and chewy, but softens up over several chews. It eventually takes on a chicken-like texture, mosty dry. Some pieces chew mushy, however.

Verdict

This Hot version of Buffalo Chicken Wing chicken jerky from Astro Fresh is pretty much the same jerky as the mild version I reviewed last week, but with red chile pepper flakes added. The flakes do add some additional flavor, and little bit of heat. But to reiterate, I don't find the heavily sweet buffalo wing sauce all that appetizing. I would prefer just a little bit of sweet, and perhaps something citrus, like lemon or orange. Otherwise, this tastes like a buffalo wing sauce that had its wings clipped, and then duct-taped by throwing in some red pepper flakes. The chicken meat often chews mushy, and doesn't quite evoke a fresh taste and feel.

This "Sweet Chipotle" is described by Chef Gand as, "...a custom blend of sriracha, honey & spices", to create a, "...perfect balance of sweetness and heat".

Ingredients

Free range turkey, tamari sauce, brown sugar, sriracha powder, honey, onion powder, cayenne pepper

Review

The first thing I pick up on my palate is a light sweet with touches of onion and cayenne. The chewing brings on a bit more sweet and onion, with a faint turkey meat flavor.

For being labeled, "Sriracha Honey", it doesn't hold up. I don't taste any sriracha, at least not the Huy Fong Foods version (branded by the rooster logo). I don't taste any honey either. In fact, there's very little heat; it's almost mild. But I would still call this, "mild medium" on my personal heat scale (level 2 out of 5).

Otherwise, the primary taste profile is that of sweet, with a blend of cayenne pepper and onion. The cayenne doesn't generate much heat, but it does impart a touch of smokiness similar to what you get from chili powder.

The meat consistency appears to be all meat, with no fat or other tissue visible. It's a dry jerky, but still easy to chew. It doesn't really have a meaty feel however, it chews down mushy. There are also a lot of small bits of meat, perhaps accounting for half of the package's contents.

Verdict

This Sriracha Honey Turkey Jerky from Think Jerky didn't offer me any sriracha flavor, nor any honey flavor. What I got was a sweetened jerky highlighted with cayenne pepper and onion, and touches of smoke. The chewing texture become mushy, and I found far too many broken bits of meat, accounting for about half the package's contents. It's still a satisfying jerky on its own merits, yet not anything unique or creative. I didn't feel it delivered on its advertised flavor, and to me, the chewing texture didn't have a natural character.
Bakke Brothers Brand is owned by Whiskey Hill Smokehouse, LLC based out of Hubbard, OR. Whiskey Hill also owns The Jerky Hut, as well as its own house brand, Whiskey Hill Smokehouse.

Bakke Brothers was started by Phil Bakke, one of Whiskey Hill's founders. The brand differs from The Jerky Hut in that it's free of preservatives such as sodium nitrite, sodium erythorbate, et al, and it's also gluten-free.

These "Teriyaki Snackin' Sticks" are made with the company's own teriyaki marinade and are marketed towards meat snackers who crave a sweeter, milder, chew.

Ingredients

Beef, brown sugar, sea salt, molasses powder, dried soy sauce, garlic powder, onion powder, spices, natural flavorings

Review

The first flavor that comes into view is teriyaki sauce, but followed by a light garlic, with low levels of salt. The chewing brings on a more defined teriyaki, along with natural meat flavors, and a bit of the onion.

For being labeled, "Teriyaki", these sticks do indeed deliver a familiar teriyaki flavor more geared towards American palates, having all the sweetened and savory goodness of soy sauce, but without the Japanese refinements that go into the classic, old world teriyaki.

Otherwise, the primary taste profile is a sausage-like natural meat flavor, with a sweet teriyaki palate, but boosted with garlic and onion.

These sticks have a firm feel and chewing that starts with a decent snap to the bite. There's a bit of a rubbery consistence at first, but eventually become more meaty as the chewing goes on. I do encounter some sparse hard bits of matter here and there, but for the most part seems like a pleasant, yet firm, snacking experience. The handling leaves a light layer of oil on the fingertips.

Verdict

These Teriyaki Snackin' Sticks from Bakke Brothers Brand deliver the perfect amount of sweetened soy sauce with a light garlic and onion seasoning, to create a Teriyaki flavor that seems well-suited for American palates, and perhaps even ideal for kids and young adults. They're quite mild, yet seasoned just enough to create a savory snacking experience. I like that these sticks have a firm feel and a decent snap to the bite, giving them a fresh character. Otherwise, these sticks won't surprise you with any unexpected bursts of flavor, or throw in something out of the ordinary. They're meant to deliver a predictable, expected flavor, yet with a fresh quality, all natural ingredients, and a firm, meaty chew that goes beyond the big national brands.
The brand has been in business since 2014, and at the beginning of 2015 had just completed a successful Kickstarter campaign.

Kevin is an active hiker and had been making his own jerky for his trips through the wilderness. His friends loved it so much, they offered to pay him for some. That got him interested in starting his own jerky business.

This Original is described the company as being based on the Original, but with, "extra spices to turn up the heat". They go on to add, "...will satisfy those jerky lovers with a knack for spicy foods."

Ingredients

Beef, tamari soy sauce, hot sauce, brown sugar, honey, chili powder, natural hickory smoke flavor, black pepper, onion powder, dried chili pepper, natural flavor.

Review

The first thing I taste on the palate is a light sweetness, with faint chile pepper flavor and a light bit of heat. The chewing brings on some of the onion flavor, but with more chile pepper definition, while the heat continues to escalate. There's also some tanginess in the chewing, and touches of chili powder.

For being called, "OG Spicy", and touted as being able to "turn up the heat", it seems to hold up well. I do get a fair amount of heat, what I would rate as "medium" on my personal heat scale (level 3 out of 5). I also get a fair amount of chile pepper flavor and some of the chili powder flavor too. It also has shades of the Original variety that this is claimed to be based on, with some of the onion flavor noticeable, and the tangy chewing.

Otherwise, the primary taste profile is that of chile pepper flavor, chili powder, and heat, with some sweetness. The onion takes a backseat role in this, while the tanginess still grabs attention.

The meat consistency seem pretty good. I find mostly all meat with no visible signs of fat, though I experienced some stringiness. It's quite soft to chew, more so than you might expect. It has a very meaty chewing texture, though a little bit rubbery.

Verdict

This OG Spicy from Chudabeef Jerky Strips does a good job of living up to its expectations with a nice level of heat that I think would satisfy most spicy food lovers, but also dishes out some chile pepper flavor too. The chili powder gives off a noticeable smoky character, while the onion and tanginess represents the Original recipe. I actually think garlic would have worked better than onion in a chile pepper-based jerky, but that's just my personal preference. The meat consistency is great, and the chewing is tender and meaty. I don't pick up much of the natural meat flavors, and the texture is still somewhat rubbery. Overall, it's a very flavorful jerky that attacks all areas of the tongue.
It was started by Roy Park in early 2015 who found an old family recipe that dated back to the late 1980s.

Since then, Roy has been selling his jerky in local markets and retailers in California. Recently they started a website and are now taking online orders.

Astro Fresh Jerky currently lists 10 varieties of beef jerky and 1 variety of chicken jerky.

Ingredients

Beef, BBQ sauce, brown sugar, BBQ seasoning, whiskey bourbon, vinegar, honey, liquid smoke, corn syrup solids, cayenne pepper, sodium nitrite

Review

The first flavors that hit my palate are a strong sweet, BBQ sauce, and light bits of seasonings. The chewing brings on more sweet and BBQ sauce, but with a light vinegar tanginess. There's a light bit of heat in the background.

For being marketed as "Whiskey BBQ", it barely holds up. The whiskey bourbon component is difficult to identify. I do, however, pick up traces of whiskey flavor, mostly as alcohol and touches of malt. But if you weren't told this had whiskey in it, you'd never notice it. Otherwise, it largely tastes like BBQ sauce. It's the kind of BBQ sauce with loads of sweet, and moderate spiciness. It's tomatoey, with some tanginess, and a little bit of smoke flavoring.

There's also a light bit of heat in the background from the cayenne, but it's just enough to rate as "mild medium" on my personal heat scale (level 2 out of 5).

The primary taste profile is that of a heavily sweet BBQ sauce, mostly mild in spiciness, but with a light tang in the chewing.

I find some streaks of fat on some pieces, which adds a light fatty flavor. Otherwise, the heavy sweet and thick sauce makes this jerky rather gummy, and very sticky to handle. Somes pieces are very soft and moist, while others can be dry on the inside, but sticky on the outside. The chewing texture starts out gummy, but takes on a somewhat meaty character as the sweetness wears off. There's a light bit of stringiness, but nothing unchewable.

Verdict

This Whiskey BBQ from Astro Fresh Jerky dishes out a BBQ sauce flavor that's moderate in spice, heavy in sweet, but lightly tangy and smoky. The whiskey component is subtle, and you may not even notice it, but I think there's just enough there to support the name. Otherwise, this jerky is a little too sweet for my tastes, though the BBQ sauce flavor is quite snackable and good. I liked the touch of cayenne heat in the background, though I found the sticky handling to be a nuisance. Overall, it's a snackable jerky that's somewhat easy to chew, though also gummy and gooey. On the other hand, it doesn't do much to differentiate itself from other brands of whiskey-laced BBQ sauce jerky.

But, if you just like thick, sweet, BBQ sauced jerky, then this is a great choice.
King had been working as a golf caddie for many years, with a hobby in making homemade jerky.

After bringing some batches of his jerky to the golf course, his fellow golfers liked it a lot, and kept asking him for more. It was only a few years later that big names like Tiger Woods, Graeme McDowell, Brandt Snedeker, Davis Love III, Rickie Fowler and Billy Horschel, among others, began buying jerky from him. Today, King has gone full corporate and now sells jerky to major retail outlets across the country.

This "Classic Recipe" is described as being made from flank steak, and seasoned with steakhouse spices, brown sugar, and is touted as the lowest sodium beef jerky on the market.

Ingredients

Beef, water, soy sauce, natural smoke flavoring, brown sugar, minced garlic, garlic powder, onion powder, black pepper

Review

The first flavors that hit my palate is a smokiness, along with a beefy, fatty meat flavor. Soon, I can pick up a light salt, and a light garlic. The chewing brings on more of the fatty, natural meat flavors, but also touches of sweet and black pepper.

For being described as seasoned with "steakhouse spices", and as being the lowest sodium beef jerky on the market, it seems up to hold up. It certainly does have a seasoning reminiscent of steakhouse seasoning, though it's light. It's not the bold, spicy, seasonings where the black pepper, garlic, coriander, pop out at you. It's instead more subtle. It's also light on the salt, it's just barely there.

Otherwise, the primary taste profile of this jerky is the natural meat flavors. It's more of a fatty, or marbleized, meat flavor. The natural smoke flavoring is light but noticeable, and then the seasonings of salt, garlic, and black pepper are a bit more light.

The meat consistency is very good. Small bits of fat are easily seen on these pieces, but no stringiness to speak of. The small slices are convenient in not having to rip apart, and the handling feels clean. There are however, a lot of tiny pieces that you'll have to pour out of the bag to get to. Otherwise, the chewing is dry, but still easy to chew through. The texture is very meaty, and by the time it chews down soft, it feels like chewing real piece of steak, cooked well done.

Verdict

This Classic Recipe from Kingmade Jerky dishes out a very natural taste in that it's focused on the natural meat flavors, with some noticeable marbleized essence. The seasonings are light enough to add a little bit of steakhouse style seasonings, but yet allow the great taste of beef to remain focused. Overall, it tastes simple yet natural, ordinary yet addicting. The meat consistency and chewing texture is likewise, feeling like real meat, not gummy, not sticky, not hard. It's just somewhat dry. But otherwise, I was impressed for its natural character, the focus on the meat flavors, the marblelized taste, and the low saltiness.
Bakke Brothers Brand is owned by Whiskey Hill Smokehouse, LLC based out of Hubbard, OR. Whiskey Hill also owns The Jerky Hut, as well as its own house brand, Whiskey Hill Smokehouse.

Bakke Brothers was started by Phil Bakke, one of Whiskey Hill'founders. The brand differs from The Jerky Hut in that it's free of preservatives such as sodium nitrite, sodium erythorbate, et al, and it's also gluten-free.

These Wild Game Snack Sticks are is marketed as, "Super Lean", "Naturally Wood Smoked", and are made from a blend of Bison and Elk.

Ingredients

Bison, Elk, salt, corn syrup solids, spices, garlic powder, natural flavorings.

Review

The flavors that I pick up are a smokiness, followed by a light salt. The chewing brings on the natural meat flavors while the smoke and salt increase just a touch. There's some noticeable garlic and faint traces of black pepper that linger in the background.

For being marketed as "super lean" and "naturally wood smoked", these do in fact feel and taste that way. It does chew like it's extra lean in that I feel mostly all meat and not as much fat or other tissues that beef or pork sticks tend to have. For that matter, they feel just a touch more dry than Bakke Brothers' other line of meat sticks. But, there's also a rich wood smokiness to this too, but more so inside the sticks themselves, and not on the collagen casing.

As for the Bison and Elk meat flavor, I certainly do pick up a light elk flavor in this. It's light enough that you might not notice it at all. The bison meat flavor is more prominent, however.

Otherwise, the primary taste profile is a well-smoked, moderately salted, natural meat flavor, with a light dusting of garlic and black pepper.

The chewing texture of these sticks are very meaty, and almost steak-like, perhaps the most "steakish" feeling meat sticks I've tried to date. I did, however, find some bits of hard, or unchewable tissues in these. Otherwise, these sticks are firm, chewy, but still easy to bite through. The casing does not offer any snap to the bite.

Verdict

These Wild Game Snack Sticks from Bakke Brothers Brand deliver a lot of natural meat flavors with a rich wood smokiness and light seasonings. They're excellent for meat stick lovers who want to go full craft and ditch the beef/pork combos for the goodness of elk and bison. I like that these sticks are simple in ingredients, yet rich with wild game meat flavor and pleasure of wood smoke decadence. Firm to the bite, and a little chewy overall, these sticks feel meaty and almost steak-like in texture. I did find some of hard, unchewable tissues in this however, but it's hard to put down these sticks for their simple ingredients, great flavor, and meaty chewing.

The first thing I taste on the palate is a light sweet, followed by a light saucy flavor, with a faint onion. The chewing brings in a bit more sweet, particularly the honey flavor, which seems to add a little tang. There's also a bit more onion definition, and a noticeable black pepper that builds in the background.

For being described as "crisp, smoky, and peppery", it certainly delivers the peppery part. The smokiness has a light effect. As for the "crisp", all I can say is that the onion seems to cut through the other flavors and present itself well.

Otherwise, the primary taste profile is that of onion. Think of something along the lines of french onion soup as a base marinade, but throw in a little bit honey for sweetness, and a bit of black pepper for spice.

The meat consistency seem pretty good. I find mostly all meat with no visible signs of fat, though I experienced some stringiness. It's quite soft to chew, more so than you might expect. It has a very meaty chewing texture, though a little bit rubbery.

Verdict

This Original from Chudabeef Jerky Strips manages to pack in some great flavor, marked by an onion seasoning, but bolstered with black pepper and tempered with honey. It actually ends up offering a little of everything: sweet, salty, savory, and spicy. But it's also pretty good chew too, being somewhat soft, tender, and meaty. I liked the bit of tanginess, and I also liked the heavier onion instead of the tried-and-true garlic that most brands rely on. It tends to still have a somewhat rubbery texture, and I don't get much natural meat flavor. But the flavors that it does offer are pretty good and creative.
Jerky's Gourmet is a new brand of jerky, founded by Tim Gerstman and Andria Taylor, based out of San Diego, CA. Gerstman, who transplated to San Diego from the East Coast 8 years ago, met Andria who also happened to love beef jerky. The two joined forces and launched Jerky's Gourmet.

The pair can be found at farmers markets across the San Diego area doling out taste samples. Their jerky is also sold at various stores and shops across town, and also sell from their website.

This "Craft Beer" jerky is part of their "Top Shelf Line" of alcohol-infused jerky, and was inspired by San Diego's love of craft beer. According to Jerky's Gourmet, "It packs a bold punch of traditional spices and, of course, lots of premium beer. We use the best domestic pale ale in our marinade to bring the on-tap flavor of hops and barley that will make your mouth water!"

Ingredients

Beef, beer, brown sugar, balsamic vinegar, seasoned salt, lime juice, gluten free soy sauce, garlic, pepper, liquid smoke.

Review

The first flavor that hits my taste buds is a faint sweet. I can pick up that beer marinade in light amounts, along with a light saltiness and a wee amount of black pepper. The chewing brings on more of the beer marinade, with the defined malt flavor and some of the hoppy bitterness in the background.

As for being marketed as "Craft Beer" flavored jerky, it seems to hold up well. I can definitely taste the beer influence in the marinade. Having marinated a lot of steaks in beer myself, I can taste its effects on the meat pretty well. There's even a light alcohol burn in the chewing, but otherwise it's largely the malt and hops I pick up.

The flavors that largely define this jerky is the beer marinade with a moderate sweetness, along with a light burn from the alcohol and black pepper. On my personal heat scale, I'd rate this as "Mild Medium" (level 2 out of 5).

There's a light amount of savory character coming from the soy sauce and garlic. It also has a light fruity quality, perhaps from the lime juice and vinegar.

The meat consistency appears good, I do see some fatty streaks and connective tissues. I can also feel a fair amount of stringiness in the chewing. The chewing feels meaty, starting out lightly chewy initially, but chewing down with a light degree of effort. By the time it's chewed down soft, it feels like steak with some stringiness in there.

Verdict: This Craft Beer jerky from Jerky's Gourmet holds up to its advertising as a beer flavored jerky, giving out a strong malty/hoppy marinade. Being a craft beer aficionado myself, I really enjoyed the strong beer influence. But it's also quite complex in flavor, giving out a light spiciness from the black pepper and alcohol infusion, as well as a light fruity quality from the lime juice and vinegar, and the savory character of soy sauce and garlic. I found the chewing somewhat stringy, but still meaty and even a little steak-like.

Ingredients

Beef, soy sauce, water, black pepper, granulated garlic, liquid smoke, vinegar, onion powder, sodium nitrite.

Review

The first flavors that hit my palate are a saltiness, with a little bit of garlic, and a noticeable soy sauce. The chewing brings on a more defined soy sauce flavor with a bit more salt and garlic. The black pepper is noticeable. There's also a touch of vinegar tanginess in the background.

For being marketed as a black peppered jerky, it seems to hold up well. I do taste a recognizable black pepper flavor in the background, but it doesn't overpower the soy sauce and garlic. It seems to work in tandem to create a trio of flavors. Yet, there's still enough black pepper to generate a spicy bite. On my personal heat scale, I'd rate this as "mild medium" (level 2 out of 5).

Otherwise, the primary taste profile is that of soy sauce, with a combination of garlic and black pepper seasoning. Add a little bit of vinegar tanginess, and that seems to round out the flavor.

The meat consistency seems good. I find some streaks of fat on some pieces, which adds a light fatty flavor and softens the chewing a bit. Other pieces are more lean and chewy, while some become more tough. I find an average amount of stringiness, considering the size and thickness of these pieces. Compared to the company's "Original" variety that we reviewed last month, this Astro Cowboy Peppered feels more meaty, and a lot less gummy, perhaps due to the absence of sugar. The chewing texture feels quite meaty, and in some cases, steak-like.

Verdict

This Astro Cowboy Peppered from Astro Fresh Jerky manages to offer up a noticeable black pepper flavor and spice without going over-the-top. It tends to keep a good balance between the soy sauce marinade and the garlic seasoning. I also liked faint touch of vinegar tanginess to liven up the chewing. But in comparison to the many other brands of peppered jerky I've reviewed, there's nothing creative or unique about this flavor. The combination of soy sauce, black pepper, and garlic is very common. The meat consistency seems good in that these are very meaty pieces, and that they have a meaty, somewhat steak-like texture. But I also found this jerky a bit dry and chewy, and in some cases, tough.

Overall, it's still very snackable, and actually quite good considering the meaty, steak-like chewing. If anything, this Astro Cowboy Peppered has an old fashioned flavor and chew, comparable to what you might find at a country store up in the mountains.
Whiskey Hill Smokehouse is a brand owned and operated by Whiskey Hill Smokehouse, LLC, based out of Hubbard, OR.

Whiskey Hill Smokehouse says this Venison Jerky has , "No wild taste", and goes on to describe the flavor as, "Just a hint of tang with a little Black Pepper", and says the meat comes from, "slices of premium, tender VENISON prime steak".

Ingredients

Venison, brown sugar, water, honey, salt, garlic, natural smoke flavoring, celery powder, black pepper

Review

The first flavor that hits the tongue is sweet, followed by a faint salt. The chewing brings on a touch of black pepper, and eventually introduces the natural flavor of venison. A light smokiness finally finishes off the flavor.

For being a venison jerky, this does give off a noticeable venison flavor. It has that more rich, red meat character that venison is known for, and just like what Whiskey Hill Smokehouse says, it doesn't have the "wild taste". It's a milder venison flavor overall, not really the sharp, darker red meat flavor.

Otherwise, the primary taste profile is a dominant sweet, along with a noticeable black pepper, against the natural venison meat flavor. The garlic and smoke flavoring remains light in the background.

The meat consistency is excellent. It's a bit tough initially, and will take some chewing effort to get through, but yet doesn't wear down the jaws that much. It's actually a dry jerky, though quite moist and sticky on the surface. Yet, these appear to be thick slices of pure venison meat, with no stringiness and nary any fat.

Verdict

This Venison Jerky from Whiskey Hill Smokehouse serves up the unmistakable flavor of venison, with a clearly defined rich, red meat character that deer is known for. It's not gamey at all, yet offers a natural meat flavor distinguished from beef and other red meat animals. The company does a great job of minimizing the seasonings to help the venison meat flavors rise to the top, yet still offers just enough sweet, garlic, and black pepper to keep this savory and snackable. Otherwise, this jerky tends to be tough, requiring you to get good grasp just to pull apart. And because the surface of these pieces are moist and sticky, that good grasp results in some messy fingers. For that matter, this jerky is better suited pre-sliced into bite sized pieces. On top of that, despite the brand having the word, "Smokehouse" in the name, the smoke flavor doesn't taste real wood smoked. Regardless, the flavor of venison is well represented here, and will certainly convert many deer meat newbies into repeat snackers.
