Divine Swine Bacon Jerky - Bangin' BBQ

divine swine bacon jerky
This Bangin' BBQ is one of three new bacon jerky varieties now offered by Divine Bovine under their new "Divine Swine" brand.

The Divine Bovine brand has been around since 2001, but company founder Anthony Longo's passion for beef jerky goes back into the 1980s when he would travel back home from Mammoth Mountain in the California Sierras, and stop for some fresh made jerky at a local shop. Since then, he's mastered a unique recipe and built a popular brand that continues to sell in retail outlets across the country. This new bacon jerky line is now among the company's best sellers.

This "Bangin’ BBQ Flavored" is the best selling of Divine Bovine's bacon flavors. They describe it as a, "mild blend of savory spices and Pops’ unique recipe, slightly sweet with natural mesquite and hickory flavors, and a little kick from ginger and cayenne." They go on to say that their bacon jerky is "NON-GMO" and claim it's gluten-free and paleo-friendly.

Wild Bill's Bacon Jerky - Sweet Maple Glazed

wild bills bacon jerky
Off the success of Wild Bill's Bacon Jerky released a couple of years ago, the cantankerous cowboy himself has followed up with a new variety, "Sweet Maple Glazed Bacon Jerky".

Made from 100% real bacon, this stuff adds a layer of sweet maple-goodness to an already pistol-packing mouthful of mayhem. We had rated Wild Bill's Original Bacon Jerky with a 5-star rating based on its great bacon flavor, thick pieces of meat, and tender chewing. I can't imagine how this new Sweet Maple Glazed variety could go wrong.

Wild Bill's is a brand of Monogram Food Solutions, based out of Memphis, TN. The brand has been around since 1955, and continues to be one of the top sellers in the world of beef jerky.

Monogram Meat Snacks is a large meat processor making jerky, meat sticks, and sausage for a wide variety of companies.

Trails Best Bacon Jerky was launched late in 2011 and distributed to Wal-Mart stores.  It's supposed to also be available in Bass Pro Shops under the "Uncle Buck" brand, and as "Wild Bill's" in certain convenience stores.

Bacon Freak - Bacon Jerky - Cajun Style

Bacon Freak - Bacon Jerky - Cajun StyleI remember growing up as a little boy, I would walk into the kitchen, reach up to my mom's spice rack, and grab that canister of Bac-Os. Yeah, even in the 1970s, they had Bac-Os. I would pour a handful, and pop them into my mouth just for the enjoyment of snacking. Why didn't they make Bac-Os into larger pieces, and just sell them as snacks?

Maybe that's the demographic that Bacon Freak has identified with their product offering, Bacon Jerky. It's real strips of bacon, but flavored with jerky-like seasonings, and chewy like real jerky. The idea actually, is not that far off from standard beef jerky in terms of being meat, it's method of cure, and its size and shape. But beef jerky is supposed to be ultra lean to keep it from spoiling, and it's supposed to be dry. Yet these days, just about anything is getting turned into jerky.

The brand is actually owned by Coastal Vineyards, Inc., headed up by Rocco "Boss Hog" Loosbrock, who started the business offering "wine of the month" clubs, and eventually branching it out to several food subscription clubs, including a "bacon of the month". The bacon club proved popular, and Loosbrock responded by putting more emphasis into the bacon theme, eventually introducing this line of bacon jerky.

Ingredients

Cured with: salt, sugar, brown sugar, sodium nitrite.

Coated with: cajun seasoning

Ingredients: spices (black pepper, red pepper, celery seed, bay, oregano, basil, thyme), paprika, dehydrated onion, dehydrated garlic.

Taste

The first taste I get from the surface is a classic bacon flavor and a good deal of saltiness, as well as some of the bacon fat flavor. I can also pick up the cajun seasonings, and the spices. Moving into the chew, that classic bacon flavor becomes much stronger, followed by more saltiness, and picking up the rear is the natural meat flavor.

So what does cajun style bacon taste like? Well first off, I'm not really sure what "cajun" is supposed to taste like anyways. All I know is that it should be "spicy", with perhaps some garlic. After that, I've seen all kinds of variations being called "cajun". This particular bacon jerky does have a moderate amount of spiciness to it. I can feel a spicy tingle in the back of my mouth. But it's not that hot really, probably mild-medium in terms of burn, or maybe just medium for delicate tongues.

I do, however, taste the spices. The oregano and garlic seems to have a good showing in this. This bacon could probably pass as a "spicy italian" jerky. Between the cajun seasoning and the spices, there's a lot of flavor complexity in this.

As for the bacon itself, again, I get a lot of bacony taste. It has a more old-fashioned flavor, if you know what I mean. It's very smoky too. I've pretty much have always had standard grocery store bacon, thinly sliced, so I'm not sure I'm qualifed to judge bacon. Fathers Country Hams, who manfactures this for Bacon Freak, has been in the business of making ham and bacon since 1840, so they obviously know how bacon was made in the old days. I think this is actually what "real bacon" tastes like.

That saltiness is actually quite strong in this. It's even more strong than the standard grocery store bacon. Note that this product does not come with a nutrition facts label. The bacony flavor and the seasonings are delicious enough that I find myself ignoring the heavy salt in deference to my internal bacon instincts.

Overall, it's that old fashioned style of bacony goodness that dominates the flavor of this jerky, with salt being a close second, followed by the cajun seasonings and spices. I find this jerky very enjoyable, mostly because I love bacon to begin with, and I love jerky, and I love spicy stuff.

Meat Consistency

These is real bacon, sliced average in terms of jerky, but sliced thick for bacon, and in strips of about 4-5 inches in length.

Being that it's real bacon, it's very moist, or should I say, very oily. There's plenty of fat, just like you'd expect with bacon. This actually chews like jerky, not necessarily like bacon. That is, it's chewy similar to the chewiness of a Jack Link's jerky. Even the fat is chewy, though much more soft than the meat.

In my mouth, the fat eventually melts away into a tongueful of oil and leaves behind the pork belly meat. The meat eats and chews like real pork meat. The strips can present some resistance when trying to bite off a piece. One strip required me to bite down, and twist left-and-right a few times to before it separated, which is perhaps what you might expect with beef jerky. But overall, this bacon jerky still has a degree of ease in tearing down, and chewing.

But as expected, it's messy. My fingers are doused with oil and bits of spice, requiring some finger licking with each bite.

Bacon Freak - Bacon Jerky - Cajun Style

Bacon Freak - Bacon Jerky - Cajun Style
Product Value

Bacon Freak sells this Cajun variety of bacon jerky at a price of $9.95 for a 2 ounce package. That works out to a price of $4.98 per ounce, putting this into the very expensive price range.

For general jerky snacking purposes, it makes for a very expensive snack, though it'll please you in every other way, being packed with flavor, giving you every bit of bacon satisfaction and more, relatively easy to eat, all in a portable form factor that lends itself to being enjoyed anywhere at anytime. It's a good value only because you can't find bacon jerky anywhere else.

As a cajun variety, I'd say it provides an ok value, but only because of its high price. It does have a cajuny resemblance, and does provide a low-to-moderate degree of mouth burn. It's too much for me to pay just for a cajun-flavored meat snack, but when you consider its a cajun-flavored bacon snack, it perhaps changes everything.

Rating

I'm giving this a best rating.

It's pretty hard to deny the taste of bacon as making an awesome snack, particularly if we're talking about real bacon strips in all of its smoky, salty, oily goodness. I've already seen bacon-flavored potato chips and bacon-flavored dips, but I don't think I've seen real strips of bacon being packaged up as a snack. What makes its cool is that it combines jerky-style seasonings in jerky-like consistency.

I found this particular cajun variety to be packed with flavor, and presenting enough flavor complexity to keep my brain entertained. Not only is it dominated by an old-fashioned flavored bacon taste with its saltiness and smokiness, but backed up with a moderate hotness, some noticeable garlic, oregano, and a collection of other tastes that add to the ambiance.

Even at the higher price per ounce, I'd recommend every jerky aficionado give this a try.

As for a good beer companion, I think a creamy stout would make a good contrast.

Bacon Freak - Bacon Jerky - Honey BBQ Rubbed

Bacon Freak - Bacon Jerky - Honey BBQ RubbedI've seen a lot of strange ideas for jerky, but perhaps bacon jerky is the strangest thus far. But at a time when brands are coming out with cactus jerky and tofu jerky, then hey why not bacon? At least it's meat. While traditional jerky is lean and dry, this stuff the is opposite, full of fat and very wet.

And who really cares anyway when we're talking about bacon? I mean, it's BACON!

Bacon Freak is a brand belonging to Moorpark, CA-based Coastal Vineyards, Inc., a company that started out running a wine club, where subscribers received bottles of wine each month. The company, founded by Rocco "Boss Hog" Loosbrock, then introduced food clubs for stuff like jams and jellies, barbecue sauces, olives, pasta, and bacon. Over the next several months, the bacon club proved popular, and has seemingly changed the focus of his business. He still offers the wine clubs, but the website of Coastal Vineyards is largely dominated by bacon and graphics of smiling pigs.

The concept of bacon jerky, according to Loosbrock, is so that you can enjoy bacon without having to feed your friends. He explains that when you cook bacon, the smell wafts its way around the house and throughout the neighborhood, causing hungry folks to show up. With bacon jerky, the aroma doesn't spread, allowing you to "hog" it all to yourself.

Ingredients

Cured with: salt, sugar, brown sugar, sodium nitrite

Coated with: golden honey BBQ rub

Ingredients: sugar, dry honey, salt, spices including paprika, soybean oil, citric acid, caramel color, garlic powder, natural hickory smoke flavor, oleoresin, paprika added for color, spice extractives.

Taste

Off the surface, I get a strong, classic taste of smoked bacon, backed with a good deal of sweetness, and a good deal of saltiness. In the chewing, it's just more bacony goodness, more salty, but none of the sweet.

For being a bacon jerky, you're getting tons of bacon flavor, mostly because it's real bacon. And it doesn't taste like the standard bacon you'd get from the grocery store chains, this has a very "old fashioned taste" that conjures up images of a bygone era somewhere in the heartland of the USA. It has a more meaty taste than the thin sliced stuff you get today.

But for being a "Honey BBQ Rubbed" variety, it certainly is sweet, but I don't pick up the BBQ part. I don't really see this as having any kind of barbecue taste. But that shouldn't detract from the taste of this product. It's still very delicious.

The saltiness tastes high compared to other meat jerkies, and even tastes high compared to grocery store bacon. But I find the flavor of this jerky to be so good, that it doesn't really bother me. Note there is no nutrition facts label with this product.

And if you're thinking that the heavy amount of fat will create a spoiled taste, it doesn't. It tastes just like bacon fat, which is probably the best tasting fat of all.

Meat Consistency

These are strips of bacon, sliced thick, and in lengths of about 3-4 inches.

It doesn't eat like standard bacon, it actually retains a chewy nature very comparable to jerky. There's enough meat on these strips that you'll get a decent amount of chewing. Even the fat has a chewy nature to it. The chewiness overall is similar to many of the "soft and tender" jerkies out there.

And for being real bacon, it's just as oily as you might expect. The oil gets all over my fingers, and with each bite I have to lick them off. There's also a good deal of sugary glaze on these strips that adds to the cleanup.

Bacon Freak - Bacon Jerky - Honey BBQ Rubbed
Product Value

Bacon Freak sells this Honey BBQ Rubbed variety of bacon jerky at a price of $9.95 for a 2 ounce package. That works out to a price of $4.98 per ounce, putting this into the very expensive price range.

For general jerky snacking purposes, it's probably too expensive to buy up pounds of this stuff to satisfy your meat snacking urges. And if bacon is all you wanted, you can already buy pre-cooked bacon from the grocery store, though I doub't it'd taste better than this.

In terms of holding its value as a Honey BBQ Rubbed variety, it does well for being sweet. But if you buy this specifically because you like BBQ flavored snackfoods, then get yourself a bottle of BBQ sauce, as you won't taste any on this.

But I would definitely recommend the jerky-lover out there to buy a package of this stuff, it's well worth adding to your repertoire of jerky experiences.

Rating

I'm giving this a best rating.

Bacon Freak may have hit upon the ultimate meat snacking idea, combining America's love affair with bacon, putting it into a snackable form factor, and topping it up jerky-like seasonings. It even eats like jerky, which I think justifies using the "jerky" product description.

While this particular variety of Honey BBQ Rubbed is for all intents and purposes, a sweet variety and not really BBQ, I found such great snackability in this, and great taste, that I couldn't keep my hands off of the "best" rating.

The price will probably prevent this product from becoming a part of your daily snacking habits, but it would make a great gift for that meat-fanatic in your family.

I think an IPA style of beer would work well with this.
