appalachian jerky
Next in the series on Appalachian Jerky Company is this Raging Ron's Hot variety. See our previous review of their Dopey Doug's Hickory Smoked.

Appalachian Jerky Company is a relatively new player in the meat snacks industry based out of Brighton, MA. The creation of two college buddies, Ron Myrick and Doug Labb, the boys had been making their own jerky for camping trips and parties. When they decided to take their seasoned meat delicacies to market, they tweaked their original recipe and developed a few more.

This Raging Ron’s Hot variety is described as using habanero sauce and red pepper to provide a steady burn while "retaining good smoked meat flavor with other spices".

Launched by two cooks Chris Woehrle and Robert Stout in November of 2009, Kings County Jerky Co. has enjoyed a lot of recent press in the news as an artisanal jerky manufacturer based in New York City. The pair got a big boost when they finished 2nd place out of 150 contestants in the Rooster Design "Next Big Small Brand" competition, earning a big hit from the crowd.

This Sichuan Ginger variety is described as a "savory, sophisticated blend of fresh ginger and fragrant spices that takes jerky in a delicious new direction."

Lawless Jerky - Bacon Salt & Pepper

Lawless Jerky recently introduced some new flavors, and among them is this Bacon Salt & Pepper variety. See our reviews of their other flavors.

The company was created by a licensed attorney named Matthew Tolnick of Santa Monica, CA. He started making jerky during his days in college when he and his fraternity boys needed sustenance through long evenings of studying. After a successful Kickstarter campaign, Tolnick moved Lawless Jerky forward as a fulltime business, producing jerky in a USDA inspected facility.

This Bacon Salt & Pepper is described by Tolnick as using soy-based bacon bits with kosher salt and black pepper.

The Jerky Connection - Dixie

the jerky connection
The Jerky Connection is a new brand of jerky based in Wrightsville, PA, having just launched last June.

The company, run by Tom Greineder, already carries 28 different flavors of beef jerky ranging from mild to burning hot.  It's signature line of jerky is the "7 Gates of Hell", a series of seven different degrees of heat made from the hottest peppers in the world. And then the company has two more flavors on top of that even hotter.

This Dixie variety is actually among their mild varieties, described as a "Southern inspired mixture of spices and Texas smoke". I chose to start with this flavor so as to establish a base line of the company's meat and marinades. But I will be venturing into the company's most insanely hot flavors later.

Tapa Doble - Garlic & Rosemary

tapa doble
Tapa Doble is a new brand of Spanish cured meats based in Madrid, Spain, having just launched last month. The company sent me a sample of their original flavor, "Garlic & Rosemary".

It's perhaps best described as "cecina", a form of Spanish cured meats utilizing Mediterranean sea salt, and then air dried. It has the look and aroma of biltong, a South African variety of cured meat.

Tapa Doble currently offers this Garlic & Rosemary variety, with a Picante variety coming soon.
