Pap's Genuine Beef Sticks - New Flavors

Wild Bill's Jerky - Premium Bulk Beef Jerky

This "Premium Bulk Beef Jerky" is effectively the jerky that made Wild Bill's Jerky famous. The long thick strips of whole meat, marinated, seasoned, and then hickory smoked, are sold in 15oz packages.

And because it comes in such a large package, the company sells a glass mason jar, at a tall 10" height, with rubber seal and metal clasp, designed to showcase Wild Bill's Jerky in all of its pistol-packing glory, keeping it fresh for later use.

Up until now, I had only reviewed jerky from their "Tender Tips" line, as well as their new Bacon Jerky. So it would only do Wild Bill's justice that I review their marquee product.

Mike's Jerky - Pineapple Habanero

A couple of weeks ago I was in Albuquerque, NM and I looked up Mike Grier, the owner of Mike's Jerky. We hung out and he supplied me with several samples of jerky, including some new flavors and some old flavors I hadn't yet reviewed.

Today, I have his Pineapple Habanero. A couple of years ago I reviewed his "Special Pineapple", and I wasn't all that inspired by it. But when I saw that he added habanero chiles into it, I thought, "Hmmmm..."

Mike describes it as, "Crused pineapples with sweet seasonings straight from the Hawaiian Islands. Oh, and a bunch of heat."

Wild Bill's Bacon Jerky

Wild Bill's brand of jerky is owned by Monogram Food Solutions, based out of Memphis, TN. Monogram also owns the Trails Best brand of jerky, as well as several others.

This Bacon Jerky was launched a year ago this month, and sold as Wild Bill's throughout the Eastern USA, but also as Trails Best in the Western USA and at Wal-Mart, and then as Uncle Buck's Jerky throughout Bass Pro Shops.

I had previously written a review of the Trails Best Bacon Jerky last July. This Wild Bill's version is basically the same jerky, just a different name, all being made from Monogram's meat processing facilities in Minnesota, Virginia, and Indiana.

Redneck Steak Beef Jerky

Redneck Steak Beef Jerky was created by Trae Stokes, based out of Pinellas Park, FL. Trae started the business as a way to earn a living after mortgage crash of 2008 busted his contracting business.

Having grown up in the South all his life, he had mastered the skills of smoking meats. On a whim, Trae had smoked up batch of jerky and sold it at a local arts and craft show, and thus was born Redneck Steak Beef Jerky.

Redneck Steak Beef Jerky is made with premium bottom round, then smoked over real oak wood for 4-6 hours. They currently offer two varieties, this Traditional, as well as "Moonshine".
