Climax Jerky - Elk

Climax Jerky - Elk JerkyClimax Jerky is a brand based out of Dillon, CO, owned and operated by Brooke Comai. She got it started in 1998, selling jerky atop of Fremont Pass, some 11,000 ft above sea level where bicyclists, motorcyclists, and other tourists dared to brave the thin atmosphere.

As I continue to read forum posts across the Internet, it appears elk jerky is getting talked about more and more. People seem to believe that it provides a good balance between the gamey venison and the mild beef.

I had actually reviewed another elk jerky for Climax Jerky, it was their "smoked elk" which is actually a far different product than this standard elk jerky. This particular elk is Climax's "brisket cut", which Brooke describes as being more chewy. The smoked elk actually earned an award from Men's Journal magazine in July 2007 as the "best jerky in the country".

It'll be interesting to see how this brisket cut elk jerky stands in comparison.

Ingredients

Elk, water, salt, brown sugar, spices, soy powder, flavorings.

Taste

The tastes I pick up from the surface is a meaty aroma, and maybe smidgeon of sweet. Not much on the surface at all. In the chewing, I get some salty taste, and a good deal of meat flavors. I can detect some black pepper in the swallowing.

It's mostly the natural meat flavors that I taste in this jerky, with it's salty soy sauce marinade. It's not an overpowering meat flavor, but strong enough to be enjoyed. I don't get any gamey taste, just the great taste of elk.

The salt intensity in this is moderate. It's probably more salt than soy sauce. It seems to stay enough in the background not to overpower the elk taste.

There is a black pepper aftertaste that sits in the back of my mouth, but light.

Overall it's a good tasting jerky, though not necessarily a flavorful one. The flavor-intensity is light overall. The natural meat flavors provide the dominant taste, the salty flavor having a second-strongest flavor, and the black pepper with a faint and distant third.

Meat Consistency

These appear to be strips of whole meat, cut into widths of about 1/4 to 1/2 inches, and lengths of about 2-3 inches.

It's a semi-moist jerky, being rather soft and tender. It's not clearly as moist as Climax's Smoked Elk jerky, however. It's easy to tear apart, and even more easier to chew.

The chewing texture has a mushy consistency, almost like fried liver, but not quite as soft, and more fibrous. The jerky is actually quite chewy at first, but after several chews, with some hydration, it mushes up. Since I haven't eaten a lot of elk, this is perhaps more a character of elk than just this jerky.

It's pretty clean eating, it doesn't leave any fallen fragments or residue on my fingers. And it's very lean, seeing no pieces of fat or connective tissue.




Snack Value

Climax Jerky sells this elk jerky from its website at a price of $10.00 for a 3.5 ounce package. That works out to a price of $2.86 per ounce, making this an expensive buy.

For general jerky snacking purposes, at this price, it presents a fair value. I found it very snackable with its natural meat flavors, and easy-to-eat consistency. With the small one ounce review sample that I was given, it was tough to throttle myself down and eat this slowly.

As an elk jerky, it's a good value. It provides a moderate amount of natural meat flavors, with just barely enough seasonings in the salt and black pepper to give the meat some additional taste interest. Elk is always going to be more pricey than beef, so a price of $2.86 per ounce really isn't too bad.

Rating

I'm giving this a good rating.

It wins by putting focus on it's natural meat flavors, which is something you want to taste when eating an exotic meat jerky like elk. Combine that with its easy-to-eat consistency, and it makes for a very snackable jerky.

The only complaint I have is that the meat flavors are not strong enough for me, it's moderate at best. I need more! If the meat flavors were stronger, then the seasonings and marinade can be stronger to provide a very flavor-intense jerky.

In comparison to Climax's smoked elk jerky, this stuff is not as good, the flavor is not as intense. The smoked elk gives you more natural meat flavors than this stuff.

Well, I tend to agree with others that elk jerky is a pretty good alternative to beef. It's taste is substantially different than beef, unlike buffalo or ostrich, but not quite as gamey as with deer.

Perhaps a nice beer companion to this is an IPA.

Climax Jerky - Peppered

Climax Jerky - PepperedClimax Jerky is a brand and retailer of jerky based out of Dillon, CO. Founded in 1998, it's a family run business headed up by Brooke Comai. The company sells direct to consumers at various tourist hot spots around Colorado, and through their website.

For review here, is the peppered "premium cut" variety. Climax appears to have two varieties of beef jerky, an all natural line of brisket cut jerky, and this "premium cut", which is not sold as "all natural". This premium cut peppered, and the premium cut teriyaki are two of Climax's biggest sellers.

Upon opening the bag there is a strong smoky aroma that escapes.

Ingredients

Beef, sugar, water, soy sauce, flavorings, apple cider vinegar, salt, paprika, smoke flavorings, citric acid.

Taste

The tastes I pick up from the surface is a slight sweetness, some smokiness, some saltiness, and a bit of the black pepper. In the chewing, I get a bit of the natural meat flavors, more of the sweet, and more of the salty.

It's got a good deal of flavor intensity in each piece, and overall a great taste. There's a fair amount of flavor complexity as well, with the sweet, smoky, salty, and pepper flavors, all with a fair to strong level of taste.

As a peppered variety, I do taste some black pepper, but not much. First, there's nary any black pepper to be seen on these pieces. When I do get a taste, I think it's mostly due to biting into a speck of black pepper. For the most part, the jerky doesn't really have a clear black pepper taste.

The natural meat flavors in this are also weak. I'm only able to pick them up by first sucking a piece for several seconds, and then chewing down. When I just pop it into my mouth and chew right away, I don't identify the natural meat flavors. But for being preservative free, it seems to have a fresh taste.

The level of saltiness in this seems average, it's a well pronounced taste, but I don't really see it as too salty. I did find one piece to be quite a bit more salty than the others.

Overall, this jerky is largely dominated by a 50/50 combination of sweet and smoky flavor, followed by the salty flavor. I can't really say the black pepper, nor the natural meat flavors, have any kind of dominant taste.

Meat Consistency

This appears to be slices of whole meat, sliced in medium thickness, and in small to medium sized pieces.

It would largely fall into the "soft and tender" style of jerky, though maybe a tad on the dry/tough side. Still, it's easy to tear apart, and easy to chew. There's maybe a very slight bit of moisture in this.

The chewing texture has some steak-like characteristics to it, mostly fibrous. It's clear to me that I'm eating meat, though it has that softened quality that you find in most soft and tender style jerkies. It's not really mushy or gummy at all.

It's largely a clean eating jerky, leaving behind no residue on my fingers or fragments on my lap. I did see some streaks of fat on some pieces (see photos below), but I didn't find any tendon or gristle.




Snack Value

Climax Jerky sells this peppered beef jerky from their website at a price of $8.00 for a 4 ounce bag. That works out to a price of $2.00 per ounce, putting this on the border between expensive and average.

For general jerky snacking purposes, it's a decent value because I did find a great taste in this, with a good deal of flavor intensity, and a decent flavor complexity. The meat chewing texture is decent, and the overall meat consistency seems good. I did find myself wanting to eat more and more, though I only had a small 1.5 ounce package, and it could be the level of saltiness may build up stronger over the course of a 4 ounce package.

As a peppered jerky, it's a poor value because at this higher range, I didn't really get much black pepper taste. While I did experience a burst of pepper flavor, it's mostly due to biting into a black pepper fleck. To me, the level of peppery flavor in this is about on par with most "original" varieties of jerky. A jerky advertised as "peppered" ought to have a well-pronounced black pepper flavor.

Rating

I'm giving this an average rating.

Overall, it's a snackable jerky. If you can ignore the "peppered" advertisement, you'll still find this having great taste with its strong sweet, smoky, and moderately salty flavor. And then here and there, you'll still experience a burst of black pepper flavor. And I did enjoy the good amount of surface flavors on this as well. The chewing texture and overall meat consistency lends this jerky a good chewing satisfaction.

But I didn't find much of anything in this jerky that said it was above average. If anything, I'd put it on the higher end of average. If I had a scale of 1-10, then I'd rate as six stars. But since I only have a 1-5 scale, it's three stars. The fact that it doesn't really stand up as a peppered jerky, hurts it's rating.

On the other hand, if you prefer lightly peppered jerky, then you might want to try this out.

Still, it's a good jerky for general snacking. You'll find a good overall flavor, and a good chewing experience.

My beer recommendation with this is a porter.

Climax Jerky - Spicy Buffalo

Climax Jerky - Spicy BuffaloClimax Jerky is a small family run jerky business based out of Dillon, CO. They got their start in 1998 selling jerky atop of Fremont Pass to tourists and bicyclists. Today, they still sell jerky up there in the nosebleeds, but also at other tourist locations, and also from their website.

Jerky labeled as "spicy" often seems a no-brainer that it's hot, but I've come to learn after reviewing several spicy varieties that it isn't necessarily. Techinically, something spicy is just loaded up with spices, it doesn't have to be hot.

This particular spicy buffalo looks like it could be hot, with visible pieces of red chile peppers. But based on the ingredients list below, it's hard to say if this is hot, or just loaded up with spices. Guess I'll have to try it.

Ingredients

Buffalo, water, salt, brown sugar, spices, soy sauce, flavoring.

Taste

The tastes I get from the surface of these pieces is a slight sweet flavor, and some faint meat aroma. Moving into the chewing, I get some meat flavors, some salty flavor, and I can feel a peppery burn building up in the back of my mouth.

To answer the question on this jerky being "spicy", it's more of a hot spicy, than just having lots of spices. I don't necessarily taste the red chile peppers, but I do feel its burn. I'd rate the hotness as a medium on single piece basis.

But I think the dominant taste of this jerky is the natural meat flavors, that's what I continue to taste throughout the chew. It's not a strong flavor, but it's strong enough to be noticed, and the other flavors in this jerky are slight enough that it doesn't really compete too much against it.

Probably the second-most dominant flavor of this jerky is the salt. It's not too salty for me, but it's higher than moderate.

The third strongest flavor element I'd give to the sweet on the surface.

It seems like there's some garlic in this, as I can detect a garlic aftertaste.

Overall, it's a great tasting jerky where the natural meat flavors come in strong enough to be enjoyed, with the salty, sweet, and bit of garlic adding some complexity to it. The burn from the red chiles are well noticed, but don't really provide their unique taste.

Meat Consistency

These appear to be strips of whole meat, sliced into varying widths of 1/2 inch to an 1/8 inch, and about 3-4 inches long.

It's a fairly moist jerky, one where the meat bites off very easily, in fact so easily I could probably just shake it a few times and have it break apart. It chews very easily as well.

The chewing texture is somewhat mushy. I don't really get a steak-like quality from it at all. The thicker piece you see in the photos below was very mushy, chewing something like fudge.

The pieces leave a thin layer of oil on my fingers, but not so much as to make me wipe them off before typing. Otherwise, it didn't leave any fragments of meat on my lap.

And it's seems pretty lean, seeing no bits of fat, tendon, or gristle.




Snack Value

I do get a good deal of flavor intensity from this, and some good meat flavors, and overall it's a good tasting jerky. The mushy chewing texture is something to think about, but I think the good flavor of the jerky can overcome that. However, because it chews so easily, you'll finish off the whole package pretty quickly. You'll have to decide if $10.00 for a package is worth the expense for general snacking.

As a spicy jerky, it does provide a good deal of spicy hotness, though not necessarily much in spice variety. I'd consider it a weak value at this higher price.

For being a buffalo jerky, which is typically more expensive than beef jerky anyways, it's a decent value, because the natural meat flavors can be well identified in this, and therefore appreciated as buffalo.

I'm giving this a good rating.

I like the overall flavor of this jerky, which is largely the natural meat flavors of buffalo, but further enhanced with some sweet, salty, and slight bit of garlic. The spiciness of the red chiles adds a moderate amount of hotness to this.

But while the flavor is good, I didn't find it with any "wow factor" to give it a best rating. And while I can usually overlook the mushy meat texture if the taste is good enough, is wasn't that good enough to make me overlook it.

Still on snacking standpoint, it's very snackable with its good taste, and ultra-easy eating. In fact, you'll gobble this stuff about as fast as a cold beer on a hot day.

And speaking of cold beer, I think a good variety to with this is a lightly flavored honey blonde ale.

Climax Jerky - Teriyaki

Climax Jerky - TeriyakiBrooke Comai and her family started Climax Jerky in 1998 through a roadside stand at 11,000 ft atop Fremont Pass in the Colorado Rockies. Bicyclists, motorcyclists, and other oxygen-starved passers by would stop to try the free samples. Since then the business has seemingly done very well.

All of their jerky is manufactured by other companies, and they also resell other small hard-to-find brands to round out their the line of meat snack offerings. They even got recognition by Men's Journal magazine, naming their Smoked Elk jerky as the best jerky in the country. Today they still sell jerky high up in the Rockies, but also in other popular tourist destinations around the area, and through their own website.

Brooke says that this teriyaki jerky is one of her top sellers.


Ingredients

Beef, water, sugar, soy sauce, pineapple powder, apple cider vinegar, salt, flavorings, paprika, smoke flavoring, citric acid.

Taste

The tastes I pick up from the surface is a fair amount of sweet, along with some smokiness, and a bit of meat flavors. Moving into the chewing, I pick up some salt taste, a teriyaki flavor, and some soy sauce taste.

There is a teriyaki taste to this that I find pleasing. It's probably in a moderate amount. I don't really find the ginger taste, or any other ingredient that mimics the pungent characteristic found in actual teriyaki sauce. But if I just eat this like a snack, without thinking too much about what I'm chewing, I do get a sense that I'm getting a decent amount of teriyaki flavor.

The natural meat flavors are largely absent in this. I did get that sense of meat flavor from the surface of these pieces, but in the chewing I just don't find anything that announces itself as the beef flavor.

The level of saltiness tastes rather moderate and low key, despite the fairly high 610mg of sodium listed in the nutrition label.

I'd say the dominant flavor of this jerky is the teriyaki flavor, with a light salty taste coming in second. After that, there isn't much more to taste.

Meat Consistency

These appear to be slices of whole meat, sliced average thickness, and in small pieces.

It's largely a dry jerky, with a slight bit of moisture, but still somewhat soft and tender. For the most part, it's easy to tear apart, and easy to chew.

The chewing texture is very steak-like.

It's a very clean jerky, leaving no residue on my fingers, and I found no stickiness at all. It's also rather lean, with all but one piece having no amounts of fat. There was one piece that had a small amount, however. But I didn't find any tendon or gristle.




Snack Value

Climax Jerky sells this teriyaki variety from its website at a price of $8.00 for 4 ounces. That works out to a price of $2.00 per ounce, putting this on the border between expensive and average.

For general purpose snacking, it's got a decent value. If you can buy this at cheaper price, it's get a better value. It does offers a pleasant teriyaki flavor, and its relative ease in tearing and chewing doesn't distract your attention. Even the chewing texture steak-like enough to provide that meat-snacking pleasure.

As a teriyaky variety, it's also a decent value. It does provide enough teriyaki flavor to give you teriyaki fanatics some satisfaction, though I'm looking for something more along the lines of real teriyaki sauce.

This teriyaki variety from Climax Jerky makes for a great snack. For the teriyaki jerky snacker, this will provide your taste buds with some good teryaki flavor and your mouth a good meat chewing texture.

But a great snack is about all I can say about it. I didn't really find anything that stood out as being above average, at least not enough to warrant a higher rating. I don't really pick up any natural meat flavors in this jerky, and with that being the case, this will need an exceptional combination of flavorings to get it up to a higher rating. While I did find a good teriyaki taste, I just didn't find anything remarkable.

For my beer recommendation, I'd suggest an Irish Red.

Climax Jerky - Smoked Elk

Climax Jerky - Smoked ElkElk is one of the exotic meats that the US Department of Agriculture allows to be sold as "venison". But unlike deer, which most of us think of as true venison, elk is not as gamey, and more like beef.

This package of Smoked Elk is from Climax Jerky, a family-run business based out of Dillon, CO. It's headed by Brooke Comai, who got it started in 1998 by selling bags of jerky atop Fremont Pass along the Colorado Rocky Mountains. Her family continues to sell their jerky up at that elevation to tourists and bicyclists braving the thin atmosphere.

This particular smoked elk happens to be the best selling jerky at Climax. It's a tenderloin cut of elk smoked with hickory, and is very moist. It actually needs to be kept refrigerated, even if the package has never been opened. In July 2007, Men's Journal magazine named it the best jerky in the entire country.

(And they must have eaten an awful lot of jerky to figure that one out).

Ingredients

Elk, seasoning (brown sugar, salt, sugar, spices, onion, garlic), water, vegetable dry powder (celery juice, sea salt, raw sugar, spices), lactic acid starter culture.

Taste

The tastes I get from the surface of these pieces is a slight bit of smokiness, a slight bit of sweetness, and a faint meaty aroma. Moving into the chewing, I pick up some saltiness, and a good deal of meat flavors. In the swallowing, I get some gamey taste.

First off, this isn't a jerky that you suck on and savor as there's little taste for that. This is largely a jerky that you bite off and chew right away. All of the flavor seems to be in the chewing.

And that flavor is the natural meat flavors, which dominates this jerky overall. I get a strong meat aftertaste as well. I'm not an elk expert, so perhaps I'm not credentialed to describe the quality of this elk. But I can tell that it's different from beef. The meat has that "gamey" taste to a slight degree, which I think is the result of elk meat being more densely packed with blood. That blood is probably what also gives this meat a slight sweet flavor.

And that slight sweet meat flavor tends to show up in greater degrees in certain areas of these strips. In a some bites, I almost thought there was some kind of fruit mixed in, like maybe raisin, or cranberry. But there isn't any, just pure meat.

And for being free of preservatives, this has a fresh taste, provided it's kept refrigerated until you open it.

In terms of others flavors, the garlic is noticeable and does give off a slight garlic aftertaste. I can also sense the aftertaste of black pepper. And there is also that slight sweetness off the surface. But for the most part, these flavors are all slight. It's the natural meat flavors that I taste the most.

There's also salt, but even the saltiness is not strong, maybe just moderate at the most.

After several pieces, I can feel a slight spicy bite in the back of my mouth. I don't know if that's the black pepper, or something else. This jerky is still mild in terms of spiciness.

Overall, it's a delicious jerky that punches out a strong taste of smoked elk meat, with hints of other spices, just enough to make the meat more interesting.

Meat Consistency

These appear to be strips of whole meat, sliced into widths of about 1/2 to 1 inch, and in lengths of about 4 inches. They are sliced very thick.

It's a very moist and tender jerky. It's almost like eating it straight off of a barbecue grill. And it's very soft to eat. It bites off as easily as a stick of string cheese, and probably about as easy to chew.

The chewing texture has a lot of that fibrous, steak-like quality, but it also has a mushy texture to some degree.

These strips have a lot of moisture on the outside, leaving some of it on my fingertips.

And they're also very lean, I didn't really find any pieces of fat, tendon, or gristle.

Climax Jerky sells this Smoked Elk at a price of $12.45 for a 4 ounce package. That works out to a price of $3.11 per ounce, making it expensive. You can get it at a lower $2.40 per ounce if you buy the larger 16 ounce package.

For general jerky snacking purposes, it's a fair value, but only because of the high price. All of its taste comes in the chewing, and you'd only enjoy this if you love the taste of elk. Otherwise, the soft and moist texture of this meat will have you eating through this so quickly, you may not gain much appreciation of the elk.

As an elk jerky, I think it's a much better value. You'd eat this purely to enjoy the flavors of elk that makes this meat so unique. And in fact, you're getting a lot of natural meat flavors. If you can discipline yourself to eat this slowly, and think about the flavors you're experiencing, then you can get plenty of bang for your buck.

The strong taste of elk meat is what won me over with this jerky. Considering you'd pay a lot of money to acquire a bag of this stuff, getting a strong dose of the elk flavors is what you'd hope to get, and you definitely get it here.

The seasonings in this jerky are light, but that's better only because it adds some interest to the meat, rather than take over the meat entirely.

And then there's the unusually soft and moist consistency to this meat that adds to the overall pleasure of eating this.

Climax Jerky also offers this elk jerky in teriyaki, peppered, and spicy. I think the spicy might actually be more enjoyable, just because I seem to like everything spicy.

I think a great companion beer is some kind of porter.

Climax Jerky - Hickory Smoked Beef

The folks at Climax Jerky will tell you to "reach your peak" as part of their marketing slogan. The brand, owned by Climax Jerky, LLC, based out of Dillon, CO, got its start in 1998, and is a family run business headed by Brooke Comai.

Climax Jerky got its start selling jerky atop of Fremont Pass, which is officially listed as 11,318 ft above sea level, along the Colorado Rockies. It was named for the Climax Mine. Fremont Pass is apparently well known for bicyclists and other travellers wanting to stop to take a gander across the countryside. The Comai family continue to sell their jerky here, building a reputation for handing out free samples to oxygen-starved tourists.

Interestingly, according to Brooke, their best selling jerky is smoked elk. Men's Journal magazine named it the "best jerky in the country" in their July 2007 edition. I'll definitely be reviewing that later, but for now we have this original beef jerky variety to review here.

Taste

The first taste I get off the surface of these pieces is a smoky, meaty aroma, followed by a slight sweetness, and just a hint of black pepper. Moving into the chew, a salty flavor comes out and a bit of the natural meat flavors.

If I can just summarize it up front, and detail it below, my first sense is that this is definitely a jerky that sits above all of the "garden variety" jerky that you find in the grocery store chains. It has a good deal of flavor consisting of an even mix of seasonings and natural meat flavors.

The natural meat flavors are light, but its taste-aroma helps strengthen its presence. What I mean by aroma is the flavor that your nostrils pick up from inside your mouth, not necessarily from the tongue. The meat flavor is actually quite good, with a smooth mellow taste, but just not a strong one. Being this jerky comes without preservatives, it still has a fresh taste.

The other flavorings in this is largely presented to me as combination of sweet, salt and black pepper. I'd say the salt has the strongest presence, but it's not overly salty at all. The sweet is probably the second strongest on a piece-by-piece basis. However, the black pepper aftertaste eventually drowns out the sweet after several pieces.

The soy sauce listed in the ingredients is not well detected. I can pick up a slight resemblance of it, but only when I look for it. Otherwise it's a flavor that adds to the "ambience" without being noticed on its own.

It's tough to pick a dominant flavor of this jerky. I'd say it's a pretty even mix of salt, black pepper, and natural meat flavors.

Meat Consistency

These appear to be cuts of whole meat, sliced into strips of about 1/4 inch thick and about 2-3 inches long. According to Climax Jerky, this is a "brisket cut".

It's a soft and tender jerky, being easy to bite off, and very easy to chew. It has slight bit of moisture in the meat. The photos below might make this jerky look very moist, but that's largely the oils which may have been drawn out of the meat from the vacuum packaging.

The chewing experience this jerky provides does have a "softened texture" but still seems to resemble eating real steak. On the other hand, I did find a couple of aberrant strips that had a mushy, or crumbly texture.

And these strips are also very lean, I found no pieces of fat, tendon, or gristle. In terms of cleanliness, my fingers do pick up some of that oil, and I find myself rubbing my fingers together to wipe them off.




Product Value

Climax Jerky sells this hickory smoked beef jerky from its website at a price of $8.00 for a four ounce package. That works out to a price of $2.00 per ounce, putting this on the border between expensive and average.

For general jerky snacking purposes, it's a good buy at that price because I do pick up a great deal of snackability. It provides a good volume of flavor, including some natural meat flavors, and isn't too salty. It's also easy to bite off and chew. If priced any lower, I'd call it an excellent value.

Overall, this hickory smoked beef jerky from Climax provides a great taste-mixture of salt, black pepper and natural meat flavors. There's even some sweetness off the surface and a bit of smokiness too. Then, include the fact it's easy to bite off and chew, and provides a good chewing experience, you've got a jerky that easily sits above many others.

I didn't go so far as to give this a best rating only because nothing really stood out as being exceptional. The natural meat flavors taste good, but is not a strong taste. The seasonings and marinade also taste good, but also don't dominate. This jerky is actually a very good basis for a wide array of other varieties, like maybe a jalapeno, or a sweet & spicy, or a red chile.

So, did I actually reach my peak with this offering from Climax Jerky? Well I'll put it this way, Fremont Pass is indeed pretty high up in elevation, but there are other passes even higher. Still, if I were drive up Fremont Pass in my car or on my motorcycle, and I saw the Climax Jerky folks there, I'd definitely stop to get some jerky.

And if I'm going to stop for some jerky, I may as well have a beer while I'm at it. How about a brown ale with this one?
