Geronimo Jerky - Original

geronimo jerkyGeronimo Jerky is a brand found only in Australia. The company, based in Brisbane, was founded by Mark Hoyle, an American who settled in Australia.

Hoyle's jerky is based on a recipe handed down to him from his mother. His "American style" jerky is made from local ingredients, and do not contain preservatives, additives, artificial colorings, and is gluten free.

This Original variety is just one of eight varieties in all, and is used as the base for all of the company's jerky.

Jim's Jerky - Chilli

jims jerkyNext in the series on Jim's Jerky is this Chilli variety. See my previous reviews of their Garlic Jerky and their Biltong.

Jim's Jerky is a brand of Temba Meats based out of Charlton, Queensland, Australia. Read my previous review of their biltong. The company is run by Jim and Cathie Tanner who bought the meat processor in 2004. Temba Meats is what produces Jim's Biltong and Jim's Jerky. Temba Meats was previously operated by a South African couple who made biltong and jerky in small quantities.

This Chilli variety is described by the company as "EXTRA EXTRA HOT", claiming it to be "eye watering jerky".

Beef jerky is still somewhat new in places like Australia, South Africa, and England, who've been more accustomed to Biltong, a similar meat snack with a clearly different flavor and texture. Where biltong tends to spoil more quickly, jerky tends to remain shelf-stable for much longer periods, making it more conducive to the retail market.

Jim's Biltong - Original

Jims BiltongJim's Biltong is a brand of Temba Meats based out of Charlton, Queensland, Australia.

Biltong is a similar product to jerky, and based on how many different ways jerky can be made, it's basically the South African variety. It typically relies open air dehydration, and instead of using marinades, it's salted and dipped briefly in vinegar, and usually relies on coriander seed for spice.

Jim's Biltong is available only in Australia.
