Blu Collar Meat Co. - Teriyaki

Blu Collar Meat Co. is a start-up jerky brand launched last April 2018 by Steven and Brandy Reinecke in Lancaster, CA. Marketed as "100% homemade beef jerky", Reinecke says they use only locally sourced meats and ingredients.

The name, "Blu Collar Meat Co." makes reference to Steven's profession as a welder. "We represent the working class, and everybody putting in work ... whatever your profession, we got the jerky for you".

This Teriyaki variety is described as being made from, "...our blend of sweet teriyaki sauce and delicious pineapple."

Review

The first flavors I pick up is a light sweet and a light natural meat. The chewing brings on a touch of teriyaki. The meat flavors pick up more as the chewing continues.

For being marketed as "Teriyaki" there's very little teriyaki flavor noticeable. I can identify the soy sauce component, and the sweetness is light. But aside from that, there's no fermented flavor and no ginger or other pungent spice. The pineapple flavor is not noticeable, however there's a faint tangy fruit that lightly piques the palate.

Otherwise, the primary taste profile is a light sweet and light soy sauce over an aged, marbleized natural meat flavor.

These slices are chewy, though still easy to bite off and get through. They eventually feel very steak-like, comparable to something cooked medium-rare. Despite the heavier marbleized cuts, I didn't encounter any stringiness or unchewable tissues.

Verdict

This Teriyaki beef jerky from Blu Collar Meat Co. remains true to the company's meat-forward identity with a well-pronounced, natural meat flavor, weighted on its marbleized slices of round. The teriyaki and pineapple flavor is light, offering up touches of soy sauce and sweet and hints of tropical tanginess in the background. But otherwise, this is a jerky for meat snackers who love that aged, marbleized flavor on slices of soft, easy chewing, but want only conservative amounts of other flavorings. I love the tender chewing, the medium-rare, steak-like texture, and the fatty meat flavor.
