Three Jerks Jerky - Filet Mignon Jerky

Filet Mignon has never before been made into jerky from a production standpoint, at least until now...

Three Jerks Jerky is the creation of three guys (or jerks), who needed a killer idea to create a business around. After chewing on some beef jerky, they wondered taking the best cut of beef and turning it into jerky. So they bought several pounds of filet mignon and began the process of perfecting a few recipes.

Three Jerks Jerky sent me packages of their three flavors for review, all made from filet mignon: The Original, Memphis BBQ, and Chipotle Adobo.

Owned and operated by Runnin Wild Foods based out of Norcross, GA, the Steak 'N A Bag brand was conceived by a couple of brothers originally producing steak seasoning blends. Since then, they've gone on to add beef sticks to their product line-up.

Billy Franks Beef Jerky - Cheeseburger

Billy Franks beef jerky is a small-batch maker of eclectic beef jerky, based in London, England. The creation of computer programmer, Will Francis Yates, it's all hand made from rare breeds of indigenous cattle such as Red Devons, Angus, Dexters, Herefords, and Galloways from Cornwall and Scotland.

Yates gets his taste and love for smoked meats after having lived in Texas for a number of years. Billy Franks beef jerky collaborates with London's street-food sensation, "The Rib Man" to create a special line of "Holy Fuck" beef jerky, some of the hottest jerky around, which I'll be reviewing later.

This Cheeseburger-flavored beef jerky was previously described by a hamburger reviewer as "a snack that nostalgically takes me back to eating McDonalds happy meal cheeseburgers when I was younger - but made with quality prime British beef".

Wild Bill's Beef Jerky - Teriyaki (Revised Recipe)

Wild Bill's Beef Jerky recently revised their Teriyaki variety, again. Last November, I wrote a review of their Teriyaki beef jerky which was stamped, "More Teriyaki Taste".

The folks at Monogram Food Solutions, the parent company of Wild Bill's, tells us that they changed the recipe again, and asked that we do another review. This new recipe has a completely changed list of ingredients, removing much of the preservatives. This new recipe hasn't quite reached stores yet, but should be reaching you by the time you read this.

The Wild Bill's brand remains one of the world's oldest operating beef jerky brands, going back to 1955 when it was part of Balwell's Butcher Shop, up in Lancaster County, PA. Today, it's one of the top selling brands in the eastern United States. It's still made the same old way after all these years, sliced from whole muscle, hung on racks by hand, and dehydrated in smokers.

The company was launched by a couple of brothers originally producing steak seasoning blends. Not longer after the company launched, they began making jerky, and once they had the recipe perfected, the Steak 'N A Bag lineup was added to their inventory. Since then, they added a line of beef sticks dubbed, "Steak Sticks".

This Original variety of jerky is said to be "...Flavor so intense you might develop a swagger. Rich. Bold. Authentic smokehouse seasoning. Rip off a piece of Steak n' a Bag Teriyaki and just try to walk a straight line."

Wild Bill's Bacon Jerky - Sweet Maple Glazed

Off the success of Wild Bill's Bacon Jerky released a couple of years ago, the cantankerous cowboy himself has followed up with a new variety, "Sweet Maple Glazed Bacon Jerky".

Made from 100% real bacon, this stuff adds a layer of sweet maple-goodness to an already pistol-packing mouthful of mayhem. We had rated Wild Bill's Original Bacon Jerky with a 5-star rating based on its great bacon flavor, thick pieces of meat, and tender chewing. I can't imagine how this new Sweet Maple Glazed variety could go wrong.

Wild Bill's is a brand of Monogram Food Solutions, based out of Memphis, TN. The brand has been around since 1955, and continues to be one of the top sellers in the world of beef jerky.

Jimmy's Sticky Jerky - Really Freaking Hot

jimmys sticky jerkyThis "Really Freaking Hot" beef jerky from Jimmy's Sticky Jerky is among the company's newest flavors, and it comes as jerky aficionados are demanding insanely hotter meat snacks.

Like other brands in the industry, this new "RFH" variety is made with ghost peppers, said to be the hottest chile pepper in the world. But it's also spiked with many other intensely hot peppers as well, and then doused in Sriracha Sauce, to really push the scoville meter above and beyond.

According to the company, "This one is Jimmy's favorite by far, with its combination of face-reddening heat and amazingly sweet flavor which balances the hotness of the Peppers perfectly."
