C-Star Provisions - American Wagyu Beef Jerky

C-Star Provisions is a new beef jerky brand that launched with a Kickstarter campaign back in August of 2018. They've since started selling online through their website.

The name, "C-Star" stems from Cowboy Star, the famous steakhouse in San Diego's East Village. It's actually a collaboration between the restaurant and an investment group. Cowboy Star had been offering this jerky to diners for the past year. When a group of investors had dropped by for dinner, they sampled the jerky and knew there was potential for a business deal.

This American Wagyu Beef Jerky is made using the same Wagyu beef that Cowboy Star uses at its restaurant. According to C-Star Provisions, this jerky has a, "rich, complex flavor and melt-in-your-mouth texture that you can only find in a true steakhouse".

The first flavors that hit my palate is a beefy, natural meat flavor, along with chili powder, and a touch of vinegar. The chewing goes on to bring out a bit of sweet with a noticeable garlic and a light smoky paprika. The natural meat flavors develop further through the chewing and introduce a light marbleized character.

For being marketed as an American Wagyu beef jerky with a "rich, complex flavor" and a "melt-in-your-mouth texture", it definitely has that marbleized flavor that you expect from American Wagyu beef along with a rich, natural meat taste. The seasonings and marinade do in fact taste "complex", due to the way each ingredients remains identifiable. The honey (not just the sweet) delivers its unique flavor, along with the Ancho chili powder, smoked paprika, particularly the garlic, and even a bit of the red wine vinegar. However, the "melt-in-your-mouth" texture is not really there. These slices of round tend retain their expected chewy nature of jerky, and don't quite deliver anything tender, moist, or soft.

Otherwise, the primary taste profile is a blend of Ancho chili powder and smoked paprika, with a light sweet and noticeable garlic, over a rich, marbleized natural meat flavor and a fair amount of fatty, oily flavor.

The meat consistency is excellent for slices of round cut against the grain, depicting its streaks of fat. I found nothing stringy and no unchewable tissues. It's all meat! The chewing texture starts out chewy, yet feels meaty right away, not rubbery or gummy. Even though there's a fair amount of oily residue on the fingers, the meat feels dry... maybe a little bit too dry for American Wagyu. But once chewed down soft, it takes on a more steak-like texture, just one that seems more well-cooked.


This American Wagyu Beef Jerky from C-Star Provisions delivers a rich, marbleized natural meat flavor, just as you'd expect from American Wagyu cattle, and it delivers a natural, fresh taste considering the company uses grass-fed, Eastern Idaho-raised beef. That flavor is met with a very unique blend of seasonings and marinade, one that foregoes the expected savory taste profile and introduces something less salty yet more flavorful through combinations of smoked chilies, garlic, and a light swash of red wine vinegar. However, it seems a bit too dry, almost like a ribeye that got cooked too long. The oily residue will help make this jerky seem more moist than it really is, however. Moreover, this jerky is sliced thin, and I kept wanting thicker and meatier pieces for something intended to be a meat snacker's paradise. Overall, it's a great flavor, one that definitely takes a creative new direction from the typical soy sauce/worcestershire combos out there.
